Taco Lasagna is made with taco meat, layers of tortillas, and lots of cheese. This casserole is the perfect combination of Mexican-inspired ingredients, and it also freezes well. It is an easy meal to make for the whole family to enjoy!

Taco Lasagna Recipe

flour tortillas

(15 ounces) black or pinto beans (rinsed and drained)

(16 ounces) refried beans (refried beans)

Mexican cheese blend

beef

onion (finely diced)

garlic (minced)

green bell pepper (finely diced)

(7 ounces) diced green chiles

salsa

taco seasoning

Salt and pepper

Preheat the oven to 350 degrees F and place a baking rack in the middle of the oven.

Lightly grease a 9x13 inch deep casserole dish with cooking spray and set it aside.

Place a large skillet or cast iron pan on the stove over medium-high heat. Once the skillet is hot add 2 tablespoons of oil to it.

Next, add the beef to the skillet and cook unmoved for 1 minute, so it gets a nice sear. After that, use a wooden spoon to break the beef.

Cook stirring for about 5 minutes, or until no longer pink. Drain grease from the pan, leaving only about 2 tablespoons.

Add diced onion, diced bell pepper, minced garlic, diced green chiles, 3 cups of salsa, and taco seasoning. Season with salt and pepper to taste.

Stir and bring to a simmer, simmer for 2 about two minutes. Reduce heat to low and cook for 5-7 minutes.

Beef Layer:

Mix cornstarch with water until cornstarch is dissolved and add to the beef mixture. Stir and cook for 2-3 minutes, until the mixture thickens. Make sure you stir, to avoid the beef from sticking to the bottom of the pan.

Remove the skillet from heat and set it aside.

Cornstarch Slurry:

Add two tortillas to the prepared pan. Cut 1 tortilla into quarters and add each quarter to the corners of the pan, to cover any empty spaces there. Cut 1 tortilla in half, and add each half to each side of the pan, straight side touching the pan and covering the empty space.

Add half of the refried beans and carefully spread them on top of the tortillas, trying to avoid moving the tortillas.

Add half of the beef mixture and spread it evenly.

Add half of the black or pinto beans, on top of the beef mixture.

Top with 1 1/2 cups of shredded Mexican blend cheese.

Repeat with another layer of tortillas, remaining refried beans, remaining beef mixture, remaining black or pinto beans, and 1 1/2 cups cheese.

Top with another layer of tortillas, spread 1 cup of salsa over the final layer of tortillas, and sprinkle 1 cup of shredded Mexican blend cheese.

Assembling the lasagna:

Bake in the preheated oven for 30 minutes. Broil for 2-3 minutes, or until the cheese is golden brown and bubbly.

Remove from the oven and place on a cooling rack. Let the lasagna cool for 30-40 minutes, before slicing and serving.

Garnish with freshly chopped cilantro and a dollop of sour cream.

Slow Cooker Mexican Lasagna

taco seasoning (or you can use 1 package taco seasoning)

oz oven ready lasagna noodles

soft taco flour tortillas

oz fresh salsa

black beans

corn

ricotta cheese

shredded cheese blend

Brown ground beef in skillet over medium high heat and drain off excess grease

Stir in taco seasoning and water and let simmer for 3-4 minutes, remove from heat and set aside

In a 9x13 casserole dish start by spreading 1/4 cup salsa on bottom

Top with 3 1/2 lasagna noodles, 1/2 cup ricotta cheese, 1/4 of the taco meat, 1/4 cup beans, 1/2 cup corn, and 1/4 cup salsa

Repeat a second layer using 2 tortillas instead of lasagna noodles

Repeat each of these layers again then finish off with lasagna noodles

Top it all off with remaining 1/2 cup salsa and 2 cups shredded cheese

Cover and cook on low for 5-6 hours or high for 2 1/2 to 3 hours or until heated through and cheese is melted

Preheat oven to 375 F (190 C) and grease the bottom of a 9x13-inch baking dish.

In a large skillet over medium-high heat, cook ground beef until browned and completely cooked through, breaking it into small pieces as it cooks. Transfer beef to a bowl and set aside. Discard the remaining grease.

In the same skillet, heat olive oil over medium heat, add onion and cook until soft, about 4 minutes. Add garlic and cook for 1 more minute.

Add cooked ground beef, taco seasoning, green chiles, and beans. Pour in 1/2 cup of water and bring to a simmer, stirring occasionally. Add 1-2 Tbsp more water if needed. Remove pan from heat.

Use 3 tacos cut in half and 1 whole taco to line the baking dish (see picture above). Spread 1/3 of the salsa on top and then 1/2 of the meat mixture. Drop 1/2 of the sour cream over the meat and spread out with a spatula. Top with 1 cup of cheese. Repeat layers. Top with 4 tortillas, remaining salsa, and cheese.

Bake for 30-40 minutes, or until the cheese is melted and lightly browned.

Preheat oven to 425°F.

Drizzle olive oil into a large skillet, over medium high heat. Add beef, onion, paprika, cumin, chili powder, salt and pepper to skillet. Brown beef for about 5-7 minutes. Add tomatoes, beans and corn. Stir to combine. Allow to cook while you begin preparing the baking pan.

Smooth about 1/3 of the enchilada sauce over the bottom of a 9x13 baking pan. Lay tortillas on the bottom of the pan, slightly overlapping until pan is covered (about 4 tortillas).

Spoon half of the beef mixture over top of the tortillas, spread evenly. Layer tortillas on top of beef mixture. Smooth about 1/3 of the enchilada sauce over the tortillas. Sprinkle 1/2 of each of the cheeses on top. Scatter the green chiles over the cheese. Add the remaining beef mixture. Spread evenly. Layer tortillas on top of beef mixture. Spoon remaining enchilada sauce over tortillas. Sprinkle remaining cheese on top of tortillas. Garnish top with olives and scallions.

Bake for 10-15 minutes, until cheese is melted and lasagna is warmed through. Remove from oven and sprinkle with cilantro.

Get ready to spice up your dinner routine with this delicious and hearty Taco Lasagna! It&#39;s a fun fusion of Italian and Mexican flavors, packed with juicy ground beef, creamy ricotta, tangy sauces, and topped with fresh veggies for a meal that&#39;s sure to impress.

enchilada sauce ((1 can))

cheddar cheese (I used Mexican blend)

lasagna noodles (no boil, (about half a package))

cherry tomatoes (chopped)

green onions (chopped)

cilantro (chopped)

avocado (sliced)

Add the ground beef to a large skillet and brown it over medium-high heat until it's no longer pink, breaking it up as you go along.&nbsp;

Add the chopped onion and bell pepper to the skillet and let it cook for about 3 minutes, until the onion is translucent and the pepper is tender.

Stir in the taco sauce and enchilada sauce and bring to a boil. Remove from heat.

In another medium size bowl, whisk together the ricotta cheese, egg and ½ cup of the cheddar cheese.

Start layering the lasagna in a 9x13-inch baking dish. Start with a layer of 3 lasagna noodles, then add ½ of the meat sauce over the noodles. Next add 3 more lasagna noodles, then spread the ricotta mixture over the noodles. Add 3 more lasagna noodles, then the remaining meat sauce. Top with the remaining 2 cups of cheese. 

Bake uncovered for 30 minutes or until the cheese melts and gets bubbly and the noodles are cooked through.&nbsp;

Let cool for about 10 minutes before slicing it then top with tomatoes, onions, cilantro and avocados.&nbsp;
