These fiestadas are a scratch version of a school lunch favorite.Thin crust, Mexican inspired sauce and taco meat topped with cheese! Easy and delicious!

Taco Pizza

pizza dough (from this recipe)

refried beans

beef (extra lean)

olive oil

cheddar cheese (shredded)

onion

garlic (minced)

taco seasoning

iceberg lettuce

tomatoes

black olives

onions

salsa

sour cream

Preheat oven to 500 F degrees.

Roll out the pizza dough and place it on a baking dish or pizza stone.

Bake the pizza dough for about 5 to 7 minutes, just until it starts to get lightly golden.

In the mean time, add the olive oil to a skillet; when oil is hot add onion and garlic and saute until onion is translucent. Add ground beef to skillet and taco seasoning. Cook until beef is cooked through.

Spread the refried beans over the pizza dough, next top with the ground beef mixture; add shredded cheese. Put pizza back in the oven and bake for an additional 5 to 10 minutes or until cheese has melted and crust is golden.

Finish the pizza off with the rest of the toppings, lettuce, tomatoes, green onions and olives.

Serve with salsa and sour cream if preferred.

Taco Pizza Bagels

Optional toppings: black olives, lettuce, tomato, onion, cilantro, avocado, tortilla chips, jalapeños

Pre-heat oven to 400 degrees F.  I like to toast my bagels for just a minute or so before topping because I find it helps them not get soggy once the toppings are put on but this step is optional.

Place bagels face up on a large sheetpan.  On each half bagel spread with 1 tablespoon taco sauce and then top with 1 tablespoon black beans and one tablespoon shredded cheese.  Place bagels in the oven and bake until toasted and cheese is melted, about 10-12 minutes.

Top with your favorite taco toppings and enjoy!

Taco pizza ingredients:

Precooked Pizza Crust (12-16 inches)

Tablespoon Taco Seasoning (or 1/2 a packet(Learn how to make homemade taco seasoning.))

Water

Refried Beans (15 oz)

Salsa

Shredded Cheddar Cheese

Sour Cream

Tomato (Diced)

Green Onions (Sliced)

Black Olives (Sliced)

Preheat the oven to 400 degrees F.

Brown the ground beef in a large skillet.  Drain the excess grease from the pan.  Then stir in the taco seasoning and water.  Allow to simmer for 4-6 until the water is cooked off and flavors are combined.

Combine the salsa and refried beans together in a microwave safe bowl.  Then heat them up slightly so they're easier to spread.

Then assemble the pizza.  Place the premade crust on a baking sheet or pizza pan.  Spread a layer of the refried beans mixture onto the crust.  Top with the ground beef and cheese.

Bake for approximately 5 minutes until the cheese is completely melted.  Remove the oven and top with the sour cream, diced tomatoes, green onions and black olives.

Slice and enjoy!

pizza crust (enough for 15x10 baking sheet)

corn meal (for sprinkling on cookie sheet)

pkg taco seasoning mix

water

(4 ounces chopped green chilies)

colby jack cheese (divided)

lettuce

tomato

Prepare pizza dough according to package (enough for a 10x15 baking sheet).

Press dough into a large cookie sheet, 15x10-inch (sprinkled with corn meal), with sides, with extra dough on the edges.

When pizza pan is prepped with dough, poke fork in dough all over.

Bake in a 425 degree oven for 10 minutes. (dough will not be completely cooked yet).

While dough is baking, brown beef completely then drain. Add taco seasoning and water and let simmer 5-10 minutes. Drain again.Top dough with drained ground beef, chopped green chilies and 2 cups of the shredded cheese.

Bake an additional 10-15 minutes (until crust is golden brown). Remove from oven, cut into squares before adding toppings.

Then top with lettuce, tomato, and remaining cheese. Serve with any additional toppings your family may want. Enjoy!
