Tarte fondante aux abricots

1.5 cuil. à soupe Poudre d’amandes

g Sucre en poudre

sachet Sucre vanillé

Placez la pâte feuilletée et son papier sulfurisé sur la plaque du four. Piquez le fond avec une fourchette.

Lavez et coupez les abricots en deux. Retirez les noyaux et émincez la pulpe en lamelles.

Mélangez l’œuf avec le sucre en poudre, la poudre d’amandes et la crème fraîche. Etalez cette préparation sur la pâte. Disposez dessus les abricots en rosace.

Fendez la gousse de vanille et retirez les graines avec la pointe d’un couteau. Parsemez-en les abricots. Saupoudrez de sucre vanillé et enfournez pendant 35 minutes environ. Servez tiède ou froid.

La tarte abricot-pistache d'Éric Kayser

Beurre

35 g Sucre glace

g Poudre d’amande

g Sel

Farine

Faire fondre le beurre au micro-ondes ou faites-le ramollir hors du frigo pendant 1h. Ramollissez le beurre dans le batteur en 1ère vitesse.

Ajoutez le sucre glace, le sucre cristal, le sel et la poudre d’amande. Une fois que ces ingrédients sont correctement mélangés, arrêtez votre batteur un instant pour corner votre bol et tout ramener au centre.

Remettez votre batteur en 1ère vitesse et ajoutez votre œuf. Il doit être bien absorbé.

Ajoutez la farine et passez le batteur en 2ème vitesse, vous devez obtenir un mélange homogène. Vous pouvez finir par la malaxer un peu à la main.

Cornez votre bol, formez une boule et laissez-la se reposer 2 heures réfrigérateur.

Pesez 164 g de pâte et aplatissez là avec votre rouleau à pâtisserie jusqu’à obtenir un disque. Beurrez légèrement votre moule avec un pinceau et foncez-le délicatement avec la pâte en reconstituant les endroits cassés. Égalisez les bords avec votre rouleau. Piquez votre pâte avec une fourchette et posez dessus un morceau de papier sulfurisé rempli de billes pour la cuisson à blanc (ou de lentilles). Enfournez pour 15 min à 150°C.

Mélangez le beurre et le sucre dans le batteur. Ajoutez les oeufs un par un, la poudre d’amande et l’amidon (ou fécule de maïs). Arrêtez votre batteur et cornez le bol. Ajoutez une larme de rhum puis, finissez par la pâte de pistache. Remplissez votre poche à douille de cette crème amande-pistache et étalez là sur le fond de votre tarte en commençant par les bords. Ajoutez vos abricots les plus droits possible. Enfournez pour 30 min à160°C.Saupoudrez votre tarte de sucre glace ou d’éclats de pistaches.

Rouleau de pâte brisée

g Poudre d’amandes

cuil. à soupe Amandes effilées

Beurrez un moule à tarte et garnissez-le de pâte. Réservez au réfrigérateur.

Mélangez le beurre pommade avec le sucre en poudre, l' œuf et la poudre d’amandes.

Préchauffez le four th. 6 (180 °C). Rincez les abricots, fendez-les en deux et retirez les noyaux.

Versez la préparation aux amandes sur le fond de tarte. Rangez les demi-abricots, la pulpe vers le haut. Parsemez la surface d’amandes effilées, répartissez le beurre restant en morceaux et saupoudrez de sucre glace. Enfournez 30 min. démoulez la tarte sur une grille et laissez refroidir avant de servir.

Make the dough. Place the flour, butter, salt, and water in the bowl of a food processor (fitted with the dough blade) or stand mixer fitted with the paddle attachment.Process for 15-30 seconds or until it forms a smooth dough.

Grease a pan. Lightly grease an 8-inch pie pan with butter.

Flatten and push the dough into the pan. Using a rolling pin, flatten the dough between two sheets of parchment paper into a 10-inch round. Transfer the dough to the prepared pan and press it into it. Cut off the excess dough if needed.Using a fork, poke holes in the bottom of the tart several times.

Shortcrust pastry

Preheat your oven to 350 °F (175°C) and place a grid on the bottom rack.

Spread a thin layer of applesauce. Spread the applesauce evenly on the bottom of the dough using a spoon.

Arrange the apricots. Halve the apricots and discard the seeds. Arrange the apricots on top of the applesauce, with each half slightly overlapping (as the apricots will shrink a bit during baking).

Sprinkle with sugar. Sprinkle the apricots with about 2 tablespoons of granulated sugar. This will allow the apricots to caramelize slightly.

Bake. Finally, transfer the apricot tart to the oven and bake for about 55 minutes or until golden brown.

If you want to give the tart a shinier appearance: heat the apricot jam in a small saucepan over low-medium heat. Next, using a pastry brush, brush the apricots with the jam.

You can enjoy this tart warm or chilled! It will keep for up to 4 days in the refrigerator.

Wait I'm so confused, as a french person I thought everyone knew and made this tart? Isn't it the exact same as any other fruit tart, why is it special to France?

Haha it's just such a funny coincidence to me. Anyways I plan to make this tart it looks delicious (and it's vegan!!)

I did this one after seeing lots of apricots at the organic market. They were ripe and delicious. First the pastry really works. Its flaky but resistant. Great tip on the oven. Then the filing quite easy to make. My guests really liked it, I found the apricots too sour - but its really a taste matter.
