Beautiful plant based Chopped Thai Chickpea Salad with a super flavorful peanut curry dressing. Healthy, easy to make and a great way to get your veggies in!

Chopped Thai Chickpea Salad with Curry Peanut Dressing

For the salad:

red bell pepper, diced

carrots (from the bag)

chickpeas,

½ cup cilantro, finely chopped

green onion

jalapeño,

For the curry peanut butter dressing:

peanut butter

ginger

garlic,

apple cider vinegar or rice vinegar

yellow curry powder

red cayenne pepper

turmeric

Salt and black pepper,

water,

To garnish:

cilantro

cashews

In a large bowl, add red bell pepper, carrot, cabbage, chickpeas, cilantro, green onion and jalapeño. Pour dressing over veggies and toss until well-combined.

In a small bowl, mix together the dressing ingredients: peanut butter, ginger, garlic, apple cider vinegar, curry powder, cayenne pepper, and turmeric. Mix to combine. Add water to thin if necessary to make a dressing like consistency.

Pour over salad and mix well to combine. Garnish with roasted cashews and cilantro. Serves 4.

Thai Chickpea Salad with Peanut Dressing

(15 ounce) can chickpeas (, drained and rinsed)

romaine lettuce

red cabbage

carrots

red bell pepper (, diced)

jalapeño (, seeded and finely diced)

chopped/sliced green onion

peanuts

natural creamy peanut butter

orange (, juiced (lime juice works too))

gluten-free soy sauce

TBSP pure maple syrup (or honey)

TBSP rice vinegar ((seasoned

TBSP sesame oil (or avocado oil)

garlic (, finely minced)

cayenne pepper (for optional spice/heat)

TBSP warm water (to thin dressing)

Let&#039;s get chopping! Finely chopped veggies are key for getting a little bit of everything in one bite. Finely chop or shred lettuce. Shred or thinly slice cabbage. For pre-shredded carrots, I like to chop these up a bit to spread them more evenly in the salad. Finely dice bell pepper and jalapeño, removing seeds and stems. Chop cilantro and green onion via preferred method. (I like to use kitchen scissors) Combine veggies and set aside.

For the dressing, add peanut butter, soy sauce, orange juice, syrup/honey, rice vinegar, sesame oil, ginger, garlic, cayenne and water to to a small bowl and whisk well.

Drizzle dressing over the salad and toss to combine. Top with chopped nuts and dive in!
