Coconut lime mojito with Thai-infused flavors of kaffir lime leaves and simple syrup is the most delicious summer cocktail you will want to reach for over and over again. The blend of creme de coconut, fresh lime juice, and infused kaffir lime syrup has all the tropical vibes that will make you want to indulge in a drink or two over the summer!

Creamy Coconut Mojito Recipe

Garnish with mint leaves

Make the simple syrup by adding sugar, water, and kaffir lime leaves in a small saucepan and infusing until the sugar is dissolved. Let the syrup cool.

In a tall cocktail glass, muddle 3-4 mint and 1 large kaffir lime leaves, add the ice, coconut rum, lime juice, kaffir lime simple syrup, and use a stir stick to gently stir the drink.

Add the cream of coconut and stir well together. Sample the drink and adjust with more rum if necessary.

Pour club soda over to the top, and stir one last time until you have a creamy froth at the top. Garnish with your favorite tops and serve immediately!&nbsp;

Nice and refreshing and beautiful presentation! I made these to go with dinner last night and it was a hit! I opted to use a little coconut cream I had on hand and just blended it with my simple syrup to control the sugar. We easily adjusted the lime to everyones liking. Definitely recommend 😊

Do you love yourself a good sour cocktail? If so, you must try this Mekhong whiskey sour with pineapple juice. It's a refreshing, sweet, and tangy drink to sip and enjoy on a warm summer day. 

Mekhong Whiskey Sour with Pineapple Juice

pineapple juice

1-ounce cherry juice. Maraschino juice and cherries.

Optional- Blood orange bitters, 3-5 drops

Add the Mekhong whiskey, pineapple juice, cherry juice, bitters (If using), and lime juice to a cocktail shaker.

Add a few pieces of ice to the cocktail shaker, and shake all the ingredients together until the shaker is cold to the touch, 30 seconds or so. Have a small taste and add more juice or simple syrup to adjust the flavors to your liking. 

Pour into a glass filled with fresh ice. If you need more sourness, a dash of fresh lemon or lime juice, stir and enjoy! 

Garnish with cherries, mint leaves, and pineapple wedges, and enjoy!

I love this cocktail and my hubby did too!  The spiciness of the mekhong whiskey gives the drink pizazz!  It’s very refreshing!!! Perfect to enjoy with food or just relaxing on the back porch.  I would highly recommend this drink and will be making it again soon:)

Combine salt and curry powder in a shallow dish. Cut a small slice horizontally through flesh of lime wedge then run around rim of a rocks glass; lightly dip rim in salt mixture then fill with ice.
