Thin Breakfast Crepes

(150 g) unbleached all-purpose flour

tsp (2.5 ml) vanilla extract

In a bowl, combine the flour, sugar and salt. Whisk in the eggs, ½ cup (125 ml) of milk and the vanilla until smooth. Gradually add the remaining milk, stirring constantly. Whisk in the melted butter.

Heat a 9-inch (23 cm) non-stick skillet over medium heat. When the skillet is hot, brush with a little softened butter.

For each crepe, pour about 3 tbsp (45 ml) of batter in the centre of the skillet. Tilt the skillet to spread the batter evenly until it covers the bottom of the skillet. When the edge peels off easily and begins to brown, it's time to flip the crepe with a spatula. Continue cooking for 10 seconds, until cooked through, and remove from the skillet.

Place the cooked crepes on a plate as you go. Cover with aluminum foil to keep them from drying out and to keep them warm. Delicious with maple syrup or blueberry sauce.

I used Cup4Cup Gluten Free flour, and this turned out very well! I also used almond milk, and I added a little bit more than the recipe called, because the GF flour is a bit dry. I added a bit extra butter too for this reason. Overall this recipe was amazing! If you don’t substitute ingredients like me, you can follow this to a tee and it should turn out wonderfully.

For the last commenter, you didn't event follow the recipe, of course it's not going to work! Different flours don't behave and hydrate the same way as all-purpose flour. 

Nonetheless, this recipe is very good. Simple and delicious!

I used buckwheat and almond flour.

Absolutely perfect! Due to not enough milk I had to top off with 1/4 cup of water. I will continue to do this. Crepes were light and fluffy!

there is too much milk and not enough flour; which makes the texture too liquid and the crepe brakes when you flip it. The correct ratio is 3 eggs, 250 g of flours, 500 ml of milk.

In a medium bowl, sift in the flour, salt, and sugar (if using). Make a well in it and crack in two eggs. Add in about 1/4 cup of milk. Whisk the eggs together, slowly incorporating in the flour.&nbsp;

As the batter starts to thicken, slowly continue to whisk in the rest of the milk. The batter should go from lumpy to smooth. Whisk in the oil. You can also use an electric mixer on low speed to bring everything together.

Preheat a 10 or 12-inch non-stick skillet or crepe pan on medium-high heat. Make sure the skillet is nice and hot before you start making the pancakes.

Melt a bit of butter on the pan and swirl it around so it evenly coats the pan. Alternatively, melt the butter in a small bowl and brush it on using a silicone basting brush (see post for why I prefer to use a brush).

Pour on the pancake batter and quickly swirl the pan around so the pancake batter spreads into a thin layer. I use a crepe spreader to get the perfect round and thin pancake (see post for why this is a handy tool).&nbsp;

Cook for about 30 - 45 seconds, until the top of the pancake is no longer liquid. Gently shake pan to loosen the pancake. Carefully flip the pancake over and cook for an addition 30 - 45 seconds.

Slide the pancake onto a plate, and serve warm. Top with a squeeze of lemon and a generous shake of powder sugar.

English Pancakes with lemon and sugar are easy, zingy and a winning sweet breakfast treat. Traditionally made on Shrove Tuesday, these thin pancakes take just 5 ingredients and less than 30 minutes.

English Pancakes with Lemon and Sugar

In a medium bowl, whisk together the flour, eggs and milk until there are no lumps left. It will be a thin batter.

Heat a non-stick pan over medium to medium-high heat. When it&#39;s hot, ladle or pour in ¼ cup of batter, then use the cup or a spoon to gently spread the batter out in a circular motion to about 20cm (8 inches)

Cook for 1 ½ to 2 minutes or until the underside is golden, then flip. Cook on the other side for another 30-60 seconds until there is golden dots all over.

Transfer to a warmed plate and cover with a clean tea towel. Repeat until all are done. If you&#39;re making a double batch, keep them in the oven on the warm setting.

To serve, squeeze lemon juice all over one side then sprinkle over a little sugar (to taste). Roll or fold the pancake up and eat with a spoon or knife and fork.
