The Christmas Island is a holiday tiki drink similar to a pina colada with allspice and other wintry spices. It's festive and tropical at the same time.

The Christmas Island: A Holiday Tiki Drink

coconut milk (regular

pineapple juice

(2 fluid ounces) coconut rum or spiced rum

(1 fluid ounce) allspice dram

(1 fluid ounce) falernum

cinnamon sticks

nutmeg

maraschino cherries

lime wedges

pineapple wedges

swizzle sticks

tiny umbrellas

Stir the coconut milk, pineapple juice, rum, allspice...

Stir the coconut milk, pineapple juice, rum, allspice dram, and falernum together in a Boston shaker or other small cocktail pitcher.

Fill two approximately 8-ounce highball or festive tiki...

Fill two approximately 8-ounce highball or festive tiki glasses with crushed ice.

Divide the cocktail equally between the two glasses.

Garnish with your choice of fruits, spices, swizzle...

Garnish with your choice of fruits, spices, swizzle sticks, tiny umbrellas, and what have you. In my opinion, more is never too much! 

Serve immediately.

Rum, fruity juices and liqueurs, and spicy additions make this cocktail a truly tropical treat.

Let&#39;s celebrate summer with a classic tiki drink -- the Painkiller cocktail! Similar to the beloved piña colada, this tropical cocktail features sweet coconut, pineapple, orange juice and a healthy dose of dark rum for the perfect summer drink. Sipping on this fruity cocktail will make you think you&#39;re vacationing beachside.

Painkiller Cocktail

dark rum (see note)

cream of coconut (not

nutmeg (for garnish)

Add the pineapple juice, rum, orange juice, cream of coconut and a handful of ice to a cocktail shaker.

Put on the top and shake vigorously for 15-30 seconds.

Fill a fun tiki glass with crushed ice. Strain the cocktail into the glass and garnish with freshly grated nutmeg. Add additional desired garnishes. Enjoy!

Mai Tai Cocktail

dark molasses rum (such as El Dorado 8-Year Demerara Rum)

light pure cane rum (such as Batiste Rhum Ecoiste)

honey

orgeat syrup (I used Small Hand Foods per Alana’s recommendation)

Spritz** Angostura bitters

Lime wheel,

Fill a double old-fashioned glass with ice and set it aside to chill. In a cocktail shaker filled with ice, combine both rums, the honey syrup, orgeat syrup and lime juice.

Shake. Strain the cocktail into the ice-filled glass. Evenly spritz the top of the drink with bitters and garnish with a lime wheel before serving.

Not quite a true Mai Tai recipe, but much better than those filled with juices and grenadine for sure! Should definitely be garnished with a nice big sprig of mint. The aroma adds so much to this cocktail. If you don't want to splurge for two different rums Appleton Estate Signature rum is a great option. Also, no need to strain over new ice, just toss everything in from your shaker and add more ice if needed to fill the glass, crushed ice is best as it actually keeps your drink colder longer! This is delicious! I've been looking for a good mai tai recipe, since the pre-bottled mixes just leave me cold, and this is both refreshing and nothing like I expected. Double win.

Also, your photography is beautiful. I'm still not sure how you got that color, though. My drinks came out a creamy almond color instead of the vibrant orange pictured.
