This Tom Collins recipe is the best! Tom Collins cocktails are made with gin, lemon, club soda and simple syrup. They're delightfully fizzy, delicious and refreshing. Recipe yields 1 cocktail, so multiply as needed (you can mix several at once in a cocktail shaker).

Tom Collins Cocktail

gin*

lemon juice

Club soda or sparkling water (I like Topo Chico)

lemon round or 1/2 orange round, for garnish

Luxardo cherry or other cocktail cherry, for garnish

sugar (traditional)

¼ cup water

To make the simple syrup: Combine the sugar (or honey) and water in a small saucepan. Warm over medium heat, whisking occasionally, just until the sweetener has fully dissolved into the water. Remove the pot from the heat and set it aside to cool.

To make a cocktail: Fill a cocktail shaker with ice. Pour in the gin, lemon juice and simple syrup. Shake for 20 to 30 seconds, until the outside of the shaker is really cold.

Fill a Collins (tall) glass with ice. Strain the contents of the shaker into the glass. Fill the rest of the glass with club soda, and give it a gentle stir with a spoon.

Garnish with a lemon round or 1/2 of an orange round, plus a cocktail cherry. Enjoy.

Low FODMAP Twisted Tom Collins

Mix water, sugar, and fresh thyme in a medium saucepan. Stir until the sugar dissolves and then bring to a boil. Remove pan from heat and let the syrup stand for 20 minutes. Remove the thyme sprigs from the syrup, then chill for an additional 30 minutes.

Time Infused Simple Syrup

Place 2.5 cups of raspberries in a bowl with 1/4 quarter cup of simple syrup. Mash&nbsp;your raspberries into a pulp with a muddler or the handle of a wooden spoon. Then, strain the mush through a fine-mesh sieve directly into the pitcher. Press the raspberries with a spatula to help get the juice out. Discard the raspberry pulp.

Add your ice cubes to the pitcher. Then add the club soda, gin, lime juice, and 12 sprigs of time. Serve cold with remaining raspberries.

Fill a cocktail shaker with ice then pour in lemon juice, gin and simple syrup. SHake well until very cold.

Pour the gin mixture into a highball glass filled with ice.

Top off with soda water and garnish with a lemon slice and cherry.

For the simple syrup, simmer the strawberries, sugar, water and basil in a small saucepan over medium-high heat. Stir frequently to dissolve the sugar and mash the strawberries as the syrup cooks to help incorporate the strawberry flavor. As soon as the sugar dissolves, remove from heat. Steep for at least 10 minutes or until the flavor infuses. Strain and store in the refrigerator until chilled. This can be done several weeks in advance.

In a highball or Collins glass, pour in the gin, strawberry-basil simple syrup, lemon juice and a handful of ice. Stir until well combined. Top with club soda and gently stir.

If desired, garnish with fresh strawberries and basil. Enjoy!

I’ve made this yesterday and it was lovely, what a nice refreshing combination. Changed few bits - used honey instead of sugar and left the gin out for the kids.  We have all  enjoyed it. Kids  went to pick some sage from the garden and helped making it. It was fun? Thanks for sharing ! Will make it again.
