Authentic Italian Bruschetta! Learn how to make a crowd-pleasing tomato bruschetta. The crisp parmesan toasts take these over the top and you will love the drizzle of balsamic glaze.

Classic Italian Bruschetta Recipe

Roma tomatoes (1 1/2 lbs, diced)

basil leaves (chopped)

garlic

Tbsp balsamic vinegar

Tbsp extra virgin olive oil

tsp sea salt

tsp black pepper

balsamic glaze ((optional))

baguette

parmesan cheese

Core and dice tomatoes (or use a food chopper). Drain any excess juice and transfer tomatoes to a medium bowl.

Stack basil leaves and roll them into a tube. Using a sharp knife, thinly slice the basil into ribbons and transfer to the bowl with tomatoes.

Finely mince 5 garlic cloves. Mix 1 tsp of minced garlic into 3 Tbsp olive oil and set aside. Add remaining minced garlic to the mixing bowl with tomatoes.

Season tomatoes with 2 Tbsp olive oil, 1 Tbsp balsamic, 1/2 tsp salt and 1/4 tsp black pepper. Stir gently to combine and set aside to marinate for 15-30 minutes. Serve with bruschetta toasts and a drizzle of extra virgin olive oil or balsamic glaze.

Make the Tomato Topping:

Preheat oven to 400˚F with a rack in the center of the oven. Place toasts on a parchment-lined baking sheet. Cut toasts into 1/2” thick slices, slicing diagonally.

Arrange toasts on the prepared baking sheet and brush the garlic infused olive oil on both sides of toasts. Bake at 400˚F for 5 minutes then broil on high heat for 1 to 2 minutes or until the edges are golden brown.

How to Make Italian BRUSCHETTA - Easy Appetizer

Tomato bruschetta with balsamic glaze is an easy Italian appetizer topped with tomatoes, onions, garlic, basil and olive oil. Delicious, fresh and simple.

Tomato Bruschetta with Balsamic Glaze

tomatoes, pitted and diced (about 4 roma tomatoes)

red onion, diced (about 1/4 red onion)

garlic,

basil leaves, chopped

olive oil

salt

black pepper

balsamic vinegar

Italian bread

garlic powder

Make the tomato topping

In a medium mixing bowl, add tomatoes, red onion, garlic, basil, olive oil and salt and pepper. Toss to combine and store in the refrigerator for one hour (you don't have to wait this long, but letting the mixture sit in the refrigerator will help bring out the flavours).

Make the balsamic glaze

In a small pot, bring the balsamic vinegar to a boil over medium heat. Continue to cook for another 4-5 minutes until the sauce is reduced by half. Immediately, pour the glaze into a small bowl and set aside to cool. The glaze will continue to thicken quite a bit when removed from heat. The glaze will be glossy and thick enough to coat the back of the spoon (similar to liquid honey).

Toast the bread

  Preheat oven to 350 degrees. In a small bowl, combine olive oil and garlic powder. Brush the top side of each of the baguette slices with the olive oil mixture. Place the slices onto a quarter sheet baking pan and toast for 10 minutes, until light golden brown.

Assemble the bruschetta

Top each toasted slice with a spoonful of the tomato mixture. Drizzle the balsamic glaze on top and serve.

This is my family's favorite appetizer.  We make this often and have made it for parties as well.  It's a big hit!

These Burrata Bruschetta Toasts are the epitome of summer. They're incredibly simple, light, and taste and look so impressive. They allow sweet summer tomatoes to shine!

Burrata Bruschetta Toasts

cherry or grape tomatoes, halved

red onion

garlic clove, grated or very finely minced

basil

crusty bread

Olive oil

garlic clove, peeled

Salt and pepper

burrata cheese

Balsamic glaze,

basil leaves,

Combine all the ingredients in a large bowl and toss well to combine. Taste and adjust seasoning, as needed.

I like to do this at least 15 minutes before serving so the flavors have some time to meld.

For the Bruschetta Topping:

Preheat the oven to 400°F and spread the sliced bread out in an even layer on a baking sheet. Drizzle each bread slice with a little olive oil and sprinkle with salt and pepper.

Bake for 10-12 minutes, or until the edges of the toasts are golden and crisp.

Remove the bread from the oven and carefully rub the garlic clove all over the surface while they are still hot.

Allow to cool slightly before topping with the bruschetta mixture.

Gently tear the burrata balls into large chunks and add them to the toasts. Garnish with additional salt, pepper, balsamic glaze, and basil leaves.

Fun fact - bruschetta refers to the toasted or grilled bread that you put the toppings on.  Toasted breads with a little olive and salt are the bruschetta, the tomatoes and cheeses are just toppings we choose to put on it  Most people think the tomato is what makes it bruschetta but it's not.

Easy Bruschetta with Balsamic Glaze

tomatoes

basil leaves

red wine vinegar (or balsamic vinegar)

extra virgin olive oil

brown sugar

Combine tomatoes and salt in a bowl.  Let sit for 20-30 minutes.  Drain tomato juice. Add garlic, basil and pepper; stir gently to combine.  Drizzle with vinegar and olive oil; stir gently to coat.  Let sit for 20-30 minutes at room temperature.

Preheat oven to 400 degrees.  Brush both sides of the bread with olive oil.  Place on a parchment covered baking sheet.  Bake for 5 minutes and then flip toasts and bake for 2-3 minutes or until golden brown.

Combine balsamic vinegar and brown sugar in a small saucepan over medium heat. Bring to a low boil and simmer for 10 minutes; stirring occasionally.  Remove from the heat and let cool for a few minutes.

Assemble by spooning the tomato topping on to the toasted baguette slices.  Place on a serving platter and lightly drizzle with the balsamic glaze.  For best results serve promptly.

Tomato Bruschetta Recipe

lb tomatoes- vine-ripened tomatoes, roma tomatoes or heirloom tomatoes

Make the bruschetta

 Slice the baguette into 1/3-1/2 inch thick pieces at a diagonal and place on a parchment-lined sheet pan. Brush the tops with olive oil and sprinkle lightly with salt. Bake 11-13 minutes or until golden. Let cool 5 minutes, then rub each of the crusty tops with raw garlic. This is key to great flavor!

Make the Tomato Basil mixture

 Cut the tomatoes into quarters and gently squeeze out any excess juices and seeds- do this with especially ripe and juicy tomatoes. Dice the tomatoes and place them in a strainer over a bowl to further drain until the bruschetta is toasted (or for 1 hour). You should end up with roughly 3 cups of diced tomatoes. Drink the tomato water; it is heavenly. 🙂

Place the drained, diced tomatoes in a medium bowl. Stack basil leaves in the same direction, roll the pointed end to the stem end, then with a sharp knife, slice across thinly to make basil ribbons. Repeat and place basil ribbons in the bowl. Add the olive oil, balsamic vinegar, salt, pepper, and optional garlic. Gently mix. Taste (with the toasted baguette) and adjust salt to taste- I usually add about 1/4 teaspoon more.

Place this in a smaller serving bowl over a larger plate or platter. Arrange bruschetta on the platter around the bowl, and serve with a spoon.

Heat pan grill or BBQ to hot and keep temperature relatively high, place sliced bread and turn until toasted golden, remove and if desired rub with a clove of garlic, sprinkle with a little salt then top with the tomato topping, serve immediately.

BRUSCHETTA RECIPE

In a medium bowl mix together the chopped tomatoes, red onion, celery, salt, oregano fresh basil and olive oil, serve over freshly toasted bread, if you like, a little drizzle of Balsamic vinegar is a tasty addition. Enjoy!
