Refried bean quesadillas

Heat the oil in a large frying pan and cook the onion and garlic for 2 mins. Add the cumin and cook for 1 min more. Tip in the beans, paprika and a splash of water. Using a potato masher, break the beans down as they warm through to make a rough purée. Season generously.

Spread the refried beans onto 4 of the tortillas and scatter over the cheese and coriander. Spoon over the salsa, then top with the remaining tortillas to make 4 sandwiches. Wipe the frying pan with kitchen paper and return to the heat or heat a griddle pan. Cook each sandwich for 1-2 mins on each side until the tortillas are crisp and golden and the cheese is melting. Serve warm, cut into wedges, with extra salsa and soured cream for dipping.

Add all ingredients to a blender or food processor and pulse until it gets to the desired consistency; you can make it chunky or smooth! I like a little bit of texture so I go with slightly chunky. Add salt to taste. Chill salsa for 1-2 hours or overnight to let flavors come together. Serve with chips, on nachos, on chili, or anything you like!

Boil the potatoes in salted water until tender. Preheat the oven to 200°C (fan).

Grease mini tart tins with olive oil. Transfer the boiled potatoes to the tins and crush them using a glass. Shape the potatoes into tart shells by pressing down with a spoon, building up the edges.

Drizzle with olive oil, then sprinkle with salt, pepper, Parmesan, and thyme.

Bake for 40–45 minutes, or until golden.

While baking, blend the feta, spinach powder (or fresh spinach), lime juice, black pepper, and olive oil in a food processor until smooth.

Italian parsley

g garlic (about 3-4 cloves, minced)

red chili (finely chopped)

pasta (dried spaghetti works best)

150 ml pomodoro sauce (of your choice!)

cheese

120 ml light cream

basil leaves (extra for serving, optional)

olive oil (for serving, optional)

In a pot, combine the water, salt, olive oil, tomato purée, Italian parsley, and basil. Cook over medium-high heat for 10 minutes to create the broth.

In a separate large pan, heat the olive oil over medium heat. Sauté the minced garlic for 2 minutes until fragrant.

Add the finely chopped chili to the pan and sauté for another 2 minutes, stirring constantly.

Add the dry pasta to the pan and stir to coat it in the garlic and chili oil.

Pour in the Pomodoro sauce and half of the parmesan cheese or pecorino romanostir to combine.

Add a large spoonful of the hot broth to the pan. Keep stirring as the pasta begins to absorb it.

After about 4 minutes, add a second spoonful of broth to the pan.

Add a third spoonful of broth and continue stirring.

Continue cooking until the pasta is al dente, adding more broth if needed. Taste to check for doneness.

Once the pasta is cooked, lower the heat and stir in the cream until fully combined.

Plate the pasta and garnish with fresh basil leaves, the other half of the grated Parmesan cheese, and a drizzle of extra virgin olive oil.
