I love this combo of chipotle cheddar mixed with pumpkin. It's a little different than the traditional sage or cinnamon that you get when roasting pumpkin. Not that I don't love those flavors, because I definitely do, but this combo is really different and works great.

Roasted Pumpkin Chipotle Cheddar Tots

bag sweet potato chips (finely crushed, 6-7)

avocado

greek yogurt

parsley (chopped)

dill

onion powder

garlic (minced)

worcestershire sauce

vinegar

salt and pepper

blue cheese crumbles

Preheat the oven to 400 degrees F.

Cut the pumpkin in half. With a spoon scrape out the seeds and pulp from the center. Place all the seeds into a bowl (you can roast them later). Place pumpkin on a baking sheet (face up or face down) and roast for 45 minutes, or until pumpkin is fork-tender. They should be nice and light golden brown when done. Allow to cool 10 minutes and then peel off the skin from the pumpkin and place the pumpkin flesh in a large bowl or bowl of a stand mixer. Add the butter to the bowl with the pumpkin and mash the pumpkin well with a fork or use your mixer to mash the pumpkin. Add the chipotle chile pepper, chili powder, smoked paprika, brown sugar, salt and pepper. Mix well and then stir in the flour and egg. Mix well, until combined. Fold in the cheddar cheese.

Grease a baking sheet with olive oil and place the sweet potato chip crumbs in a shallow bowl (I recommend pulsing the chips in your food processor if you want very fine crumbs - like bread crumbs, but you can also just stomp on the chip bag with your feet, the turn the bag over and repeat). Scoop about 1 heaping teaspoon of the pumpkin mixture onto a spoon and then use your finger to push the mixture of the spoon into the chip crumbs. The pumpkin mixture will be wet, but this is fine. Roll the pumpkin mixture in the chips and coat well. Shape into a small ball. Place on the prepared baking sheet. Repeat until all of the pumpkin mixture is gone. Spray the tots with cooking spray. Bake for 15 minutes and carefully flip the the tots over and bake another 10-15 minutes or until golden and crisp.

To make the avocado blue cheese ranch, combine all ingredients except the blue cheese in a food processor and blend until creamy, scraping down the sides occasionally when needed. Taste and season additionally if desired. Then fold in the blue cheese. The avocado ranch can be stored in a seal-tight container for 1-2 days.

Shred the potatoes by hand or in a food processor with the shredded blade. The latter takes about 2 seconds to complete the task, so if you want to make short work of things, put that box grater away for another day. You can keep the skins on the potatoes, to make even shorter work of it all.

Combine the shredded potatoes with the eggs and panko crumbs. Season to taste with salt and pepper.

Once you’ve combined all of the ingredients, you need to blend them just a little more. Back to the food processor, this time fitted with the steel blade. Use a couple of quick on/off pulses to get it all blended and chopped up just a bit more. This blending will make the mix easy to shape.

Shape the mix with your hands into bite-sized “tots”. Place them side by side on a parchment paper covered baking sheet. Bake in a preheated 425 degree oven for about 15 minutes or until golden brown.

Once the baked tots are cooled, they freeze beautifully. Freeze them in a single layer on a baking sheet. Once they are completely frozen, transfer to a plastic freezer bag. To reheat, place frozen tots on a baking sheet at 325 for about 30 minutes.

Pour the tater tots in a large mixing bowl. Microwave for one minute and forty-five seconds (or until soft)

Add one egg to the softened tater tots and mix.

Grease a cast-iron pan with butter, then pour the tater-tot mixture into the pan and spread it out to create a crust.

Bake the crust for 15 minutes at 400˚F (200˚C).

Remove from the oven, then add ½ of the cheddar cheese, ½ of the mozzarella cheese, and ½ of the bacon bits to the base of the crust.

Crack the rest of the eggs evenly over the top of the crust, then top with the rest of the cheese and bacon bits.

Bake for 15 more minutes at 400˚F (200˚C).

Preheat your oven to 375 degrees.

In a medium size bowl, mix all of the ingredients together until well incorporated.

Generously grease a mini muffin tin and evenly distribute the mixture into about 16 of your muffin tin cups.

Use your fingers to squish the mixture down so that it&#039;s well compacted.

Top with more cheese and bake in the center rack for 14-16 minutes or until the cheese starts to brown.

Let them cool for at least 5 minutes before removing them from the pan.

Serve alone or with a little ranch or ketchup for dipping.

Store any leftovers in the fridge for up to 3 days.

~70-75 frozen tater tots (from a 32-ounce bag)

Heat the oil or butter in a large stove-top casserole dish or large oven-safe skillet to medium. Add the onion and sauté 4-5 minutes or until soft. Add the ground beef and cook another 5-7 minutes or until browned, breaking up the pieces with a wooden spoon as it cooks. Stir in the mixed vegetables and sauté another 2-3 minutes. Stir in the salt, mustard powder, celery salt, onion powder, garlic powder and black pepper.

Stir in the flour until incorporated. Increase the heat to medium-high. Add the stock and bring to a simmer, stirring constantly for 2-3 minutes, until thickened. Taste and adjust the seasoning, if necessary. Stir in the Worcestershire sauce (if using). Remove from the heat and flatten the beef mixture in an even layer.

Sprinkle the cheddar cheese in an even layer over the beef mixture. Line with tater tots. Bake 20-25 minutes or until the tater tots are golden and crispy and the filling is bubbly. Let rest for 5 minutes, then scoop and serve.

Preheat the oven to 375°F and lightly spray a 9x13-inch baking dish with nonstick cooking spray. Brown meat and onion together in a large skillet over medium-high heat. Drain off fat.

Return meat to the skillet over low heat and add ketchup, Worcestershire, Tony Chachere’s Original Creole Seasoning, mushroom soup, and drained tomatoes and chilies. Stir to combine and allow to heat through. Spread evenly into the prepared dish. Top with pepper jack cheese.

Cover top of mixture with tater tots. Sprinkle a little more Tony Chachere’s Original Creole Seasoning over the top of the tots.

Bake uncovered for 30 minutes or until tater tots are browned and heated through. (If the tots aren&#039;t cripsy to your liking, a few minutes under the broiler should crisp them right up.)
