These smoked pork chops are so easy and so delicious!  An optional brine and a quick rub and you are good to go!

Easy Smoked Pork Chops

pork chops (bone in, 1/2 to 3/4 inch thick)

black pepper

paprika

brown sugar

salt

dry mustard

cayenne pepper

Option step - brine pork chops.  See notes for link to brine recipe.

Preheat wood pellet grill to 225 and fill with your favorite wood pellet - we used hickory.

Combine rub ingredients in a small bowl.

Pat pork chops dry and sprinkle generously with rub, patting it int.  Let pork chops sit for 30 minutes at room temperature.

Place chops directly on grill and cook until temperature reaches 145.  (Mine took an hour and 15 minutes.

You can flip the pork chops about half way through if you&#39;d like, but with the excellent heat circulation, I usually don&#39;t bother!

Let rest for 5 minutes before serving.

Tender, juicy bone-in pork chops with a homemade rub that are smoked on your pellet grill!

Smoked Pork Chops Recipe

Tbsp pork rub

pork chops (thick cut)

Prepare smoker to 250 degrees F according to manufacturer's directions.

Sprinkle rub on both sides of pork chops. How much you apply is really up to how much you'd like on your pork chops!

Place pork chops on prepared smoker. Smoker for about 1 hour or until the internal temperature of the pork chop reaches 145 degrees F.

Remove pork chops from smoker and let rest for about 5-10 minutes. Serve.
