Turkey Tacos

lb turkey

onion (finely chopped)

garlic

tbsp oil

tbsp taco seasoning (low sodium)

tsp salt

Drop of any sugar

Avocado (tomatoes, lettuce, cheese, red onion and lime, for serving)

Preheat large ceramic non-stick skillet on medium heat and swirl oil to coat.

Add onion and garlic and saute for 3 minutes, stirring occasionally.

Add ground turkey, taco seasoning, salt and pepper. Saute for 10 minutes, stirring and breaking into small pieces with spatula often.

Add tomato sauce, water and a touch of sugar. Stir bring to a boil and simmer for 1 minute.

Warm up tortillas on another hot skillet or in a microwave.

Serve hot in a corn tortilla with your favorite taco toppings like avocado, tomatoes, lettuce, cheese, red onion, lime and guacamole.

Add all ingredients, except water, to a freezer bag - I like to use these reusable 1 gallon silicone bags.

Swoosh things around to mix tomato paste with turkey to prevent burning.

Freeze for up to 3 months.

Cook from frozen with 1/2 cup water on high pressure for 12 mins.

Release pressure using Quick Release.

Whisk 2 tbsp cold water with 2 tbsp cornstarch and add to Instant Pot.

Press Saute, stir and cook until taco meat has thickened.

Add ground turkey to hot skillet. Stir to crumble, approximately 14 to 16 minutes. Always cook to well-done, 165°F. as measured by a meat thermometer.

Add tomatoes and beans. Add meat mixture to taco shells.

TURKEY TACO MEAT: Dice the onion and mince the garlic. Heat a large, nonstick skillet over medium high heat. Add 1 tablespoon olive oil and once the oil is hot, add in the diced onion. Cook for 3-5 minutes or until soft and translucent. Add in the garlic and cook for 20-30 seconds. Add in all of the seasonings: 1 tablespoon chili powder, 1 teaspoon ground cumin, 1 teaspoon paprika, 1/2 teaspoon onion powder, 1/2 teaspoon garlic powder, 1/2 teaspoon dried oregano, 1/2 teaspoon salt, and 1/2 teaspoon pepper, and 1/2 tablespoon beef bouillon powder. Stir around the spices until fragrant, about 30 seconds. Nothing should be burning; reduce the heat if needed.

TACO MEAT CONT.: Add in the ground turkey. Crumble the meat into small pieces and cook until no longer pink (but not cooked through all the way), about 5-8 minutes. Add in the tomato sauce and scrape the bottom of the pan to release any browned bits (this is where the flavor is!) Let simmer for 3-5 minutes, or until fully cooked through, and then remove from heat.

ASSEMBLY: Char/warm tortillas (Note 1). Add even amounts of the turkey taco meat and then sprinkle cheese right on top. The taco meat should be hot enough that the cheese will melt. Immediately add toppings of choice. Our favorites are a big scoop of sour cream, ripe sliced avocado (or guacamole), a few chopped cherry tomatoes, fresh cilantro, and a squeeze of fresh lime juice. Healthy Turkey Tacos (Ground Turkey and Peppers)

Heat oil over medium-high heat. Add onions and peppers and sauté for 6-7 minutes until veggies start to soften.

Add garlic, turkey, chili powder, cumin, paprika, oregano, and 2 tsp. salt, and pepper. Break turkey up with a large spoon or spatula and cook for 7-10 minutes until cooked through.

Once turkey is cooked, add tomato and continue cooking for 2-3 minutes. Taste and adjust salt level if desired. Remove from heat and serve.

Serve with tortillas, and toppings like salsa, guacamole, sour cream, chopped lettuce, diced tomato, shredded cheddar cheese, cilantro, olives, and your favorite other taco toppings.

Heat Pan

In a large skillet, heat oil over medium-high heat. If you’re using a nonstick skillet, you may not need oil.

Brown Meat and Vegetables

Add onion, bell peppers, and ground turkey. Cook, breaking up the meat, until the meat is no longer pink and the vegetables are cooked.

Add Seasoning

Add flour and taco seasoning and stir to combine, continuing to cook for 1 to 2 minutes or until spices are fragrant.

Simmer

Stir in water, and reduce heat to medium-low. Continue to simmer over medium-low heat, stirring occasionally until water is mostly evaporated, about 10 minutes. You can keep this at a low simmer, partially covered, until you’re ready to serve, adding more water if necessary to keep the mixture from drying out.
