<em>Tired of sweet? This Savory Oatmeal is packed with flavor and is a perfect way to start your day.  Easily customizable, it's perfect for a quick breakfast or Meal-Prep! </em>

Savory Golden Oatmeal

Garlic,

Carrot, grated

tbsp Roasted Red Peppers, diced

tsp Turmeric

tbsp Fresh Herbs

tbsp Vegan Cream Cheese (I use Kite Hill)

Low-Sodium Vegetable Broth

Salt and Blak Pepper,

First, add a small splash of Vegetable Broth to a medium sized pot; add the minced Garlic and sauté over Medium, until translucent.

Add in another splash of Vegetable Broth,  and then add the Carrot, Roasted Red Pepper, Fresh Herbs and Turmeric. Let cook for another 2-3 minutes. Stir in the Cream Cheese into the mixture until it is evenly incorporated.

Next, add the Oats and Remaining Vegetable Stock to the pot. Increase the heat to high until the mixture starts to boil, then bring it back to medium heat and cook until your desired consistency is reached, stirring frequently.

Transfer the mixture to a bowl and top with additional Herbs, Vegetables, and/or a drizzle of Nut Butter. Enjoy warm.

Fantastic. I can’t choke down the sweet oatmeal’s but I coukd eat this everyday. Think I’ll add mushrooms next time. The vegan cream cheese was perfect. So tasty and filling. Thank you!

I had serious reservations but want to try to include more whole foods in our diet and WOW! This was epic! The kids loved it and even had seconds...thanks so much for the inspiration

My best savory oatmeal experience thus far! Had fun improvising with what I had on hand—used dried rosemary instead of fresh herbs, omitted roasted red pepper, and water instead of broth but added a tbsp of soy free soy sauce to keep umami/depth and I used the tahini/acv substitution. Outcome was great and I think it would pair really well with some fried oyster mushrooms on top. Thanks, Caitlin!

This beautiful golden coconut apple oatmeal is rich in nutrients, has anti-inflammatory properties and tastes amazing topped with fruits like mango and banana and a sprinkling of healthy nuts like walnuts or almonds.

Golden Coconut Apple Oatmeal

rolled oats (50 g)

water

salt,

tbsp ground flax seed (7 g)

small apple, diced (100 g)

tbsp unsweetened shredded coconut (12 g)

tsp turmeric

tsp each ground ginger, cinnamon and cardamom

black pepper

almonds

banana mango

almond butter

cacao nibs

coconut milk or almond milk

Bring the water to a boil in a small sauce pan then add the rest of the ingredients and reduce to a light simmer. Add a bit more water or some coconut or almond milk if it seems to thick.

Cook for 5 minutes, stirring often then remove from heat and let sit for a few minutes before transferring to a bowl and adding any desired toppings.

I was very surprised how good this is. I was sceptical of adding turmeric to a sweet dish, but it turned out to be really good! I’m obsessed!

Hi Deryn, is the salt content correct? I usually love your dishes and don’t find them to be too salty but this was woah!  I added more water and am trying to cook some of it off. Next time I’ll try it with just a pinch of salt.
