MATCHA MILK BREAD TURTLES

FOR THE TANGZHONG:

tbsp (24 grams) flour

(60 milliliters) water

(60 milliliters) milk

bread flour (we use King Arthur Organic)

sugar

matcha (we use Encha)

instant yeast we use Saf Instant Gold)

fine grain salt

non-fat dry milk powder (we use Now Foods Organic)

whole milk, room temperature

tsp (4 grams) vanilla extract

egg, room temperature & whisked

unsalted butter, melted & cooled

FOR THE FILLING, EYES & DUTCH CRUNCH:

white chocolate, finely chopped

black sesame seeds

tsp (3 grams) active dry yeast

tsp (2 grams) salt

(50 grams) rice flour rice

My mom always made Pecan Caramel Chocolate Turtles during the holiday season. Toasted pecans and creamy caramel are mixed together, allowed to harden, and dipped in melted chocolate.

Dip each candy into Candiquik with a fork and let excess drip off. Place on wax or parchment paper and let harden. Store in an airtight container at room temperature.

Easy Crockpot Turtles

almond bark

(12 oz) bag semi sweet chocolate chips

oz milk chocolate chips

kraft caramels (the wrapped cube kind)

pecans

Add almond bark (broken in pieces) and both kinds of chocolate chips to crock pot and cook on low for about 1 hour, or until melted. Mix in pecans, stir to combine, and cook for an additional 15 minutes.

Line two muffin tins with paper liners and place an unwrapped caramel or rolo candy in the center of each liner.

Use a cookie or ice cream scoop to spoon about ¼ cup of the melted chocolate pecan mixture over each caramel.

Allow turtles to cool until solid, this can be sped up in the fridge.

Store turtles in an airtight container in a cool place.

To roast pecans: Preheat oven to 325 degrees F and line a cookie sheet with parchment paper. In a medium sized bowl, toss pecans in 3 tablespoons butter then season with salt. Transfer nuts to the prepared cookie sheet and bake for 13-15 minutes. Set aside to cool.

To make caramel: Add brown sugar, condensed milk, corn syrup, butter, and water to a small saucepan. Bring mixture to a boil, stirring often.

Maintain a boil until the mixture reaches 245 degrees F, then immediately remove from heat and stir in vanilla and salt.

To assemble Browns: line baking sheet with parchment paper and arrange the cooled pecans in groupings of 3-4, spaced a couple inches apart. Spoon a dollop of caramel on top of each pile. Allow caramel to cool.

Once caramel has cooled, spoon the melted chocolate on top of each brown and allow to cool.

Store in an airtight container in a cool place.

Clusters of pecans and gooey caramel topped with rich, creamy chocolate.

Chocolate Turtle Pecan Clusters

Tbsp Heavy cream

oz Chocolate chips (milk, dark or semi-sweet)

tsp Vegetable shortening

Coarse sea salt (optional)

Preheat oven to 350 degrees

Spread the pecans on a baking sheet and bake for 10 minutes stirring half way through. Remove from the oven and allow to cool.

With a sharp knife, roughly chop the pecans reserving some halves to top the turtles.  No need to be precise with the chopping, we are just looking for small pieces.

On a baking sheet lined with parchment paper or a silicone baking liner, make little piles of chopped pecans (about 1 tablespoon each).

Place the caramels and cream in a large, microwave safe bowl or the top of a simmering double boiler.  Stir the caramels with the cream until they are melted and smooth.  If using a microwave, use 20 second intervals and stir between each interval.

While the caramel is warm, pour 1 tablespoon of caramel over each pecan pile.

Place the tray in the freezer for a few minutes to set the caramel while you melt the chocolate.

Place the chocolate chips and shortening in a microwave safe bowl or top of a simmering double boiler and heat until melted and smooth.  If using a microwave, use 10 second intervals stirring between each interval.

Remove the turtles from the freezer and drizzle chocolate over each caramel cluster.

Before the chocolate sets, sprinkle with sea salt or press a pecan half on the top.

Place the turtles in the freezer for 10-15 minutes to set, then move to an airtight container for storage.  Be sure to separate each layer of turtles with wax or parchment paper.
