This Cannellini White Bean Salad is incredibly delicious, made with tuna, fresh basil, and zingy lemon. It's light, fresh and ready in under 10 minutes, perfect for lunch or as a healthy side dish.

Tuna White Bean Salad

5.6 oz (160 grams) tuna (, in oil)

1.5 lbs (720 grams) cannellini beans ((2 cans))

red onion

basil

lemon

lemon juice (, freshly squeezed)

olive oil

salt and pepper (to season)

Drain and rinse the cannellini beans and place in a large bowl then drain the tuna and add to the bowl.

Finely chop the red onion and add to the bowl with the cannellini beans and tuna. Grate the zest of 1 lemon over the tuna and beans then squeeze over the juice of half the lemon. Season with salt and pepper.

Finely chop the basil and add to the bowl along with 2-3 tbsp olive oil (add more if desired). Stir everything until combined. Enjoy.

This recipe for kidney bean salad is perfect for a quick lunch, a make ahead side dish or a plant based meal.  It&#39;s loaded with bold flavors, contrasting texture, vibrant colors.

Kidney Bean Salad Recipe

red kidney beans

cannellini beans

cucumbers (diced)

celery (diced)

radishes (diced)

scallions (thinly sliced)

flat leaf parsley (chopped)

walnuts

Tablespoons drippy tahini

maple syrup

coarse sea salt

white pepper

PREPARE SALAD INGREDIENTS: Drain and thoroughly rinse beans. Dice cucumbers, celery and radishes. Thinly slice scallions.  Finely chop parsley and roughly chop walnuts.

MAKE THE DRESSING: In a small bowl, whisk together tahini, olive oil maple syrup, salt and pepper.  Zest and juice the lemon into the bowl and whisk again.  Dressing will continue to thicken as it sits.

Add all salad ingredients to a large bowl.

Pour 1/2 the dressing over the salad and mix well.  Taste. Add more dressing if salad is dry. Store unused dressing in tightly sealed container in the fridge for up to a week.

Healthy Tuscan Bean Salad

chickpeas

can, navy beans (drained and rinsed)

barley (cooked according to package directions)

pepper,

red pepper,

tomato,

sun dried tomatoes, chopped

green onions (finely diced)

garlic,

Tablespoons skinny basil pesto (or store-bought pesto)

Tablespoons canola oIl

Tablespoons white wine vinegar

Tablespoons lemon juice, fresh

salt and ground black pepper,

In a small mason jar, combine the Skinny Basil Pesto (or store made pesto), canola oil, white wine vinegar, lemon juice, salt and pepper, to taste.&nbsp;

Place cover on mason jar and shake well, to combine all ingredients.&nbsp;

&nbsp; Check the seasoning and adjust, if necessary. Set aside.

Tuscan Salad Dressing

In a large mixing bowl, combine the chickpeas, navy beans, cooked barley, green peppers, red peppers, diced tomato, sun-dried tomatoes, and green onions. Season with ground black pepper.

Toss the bean salad with the Tuscan Dressing, recipe above.&nbsp;

Taste for seasoning, adjust if necessary.&nbsp;

Chill salad for a few hours or overnight to blend the flavors. Serve as a side dish or as an appetizer with tortilla or pita chips
