A classic vanilla cake paired with a simple vanilla buttercream.

How to Bake Flat Cakes

all-purpose flour

tsp baking powder

salt

unsalted butter (room temperature)

sugar

eggs (room temperature)

vanilla

buttermilk (or whole milk, room temperature)

vanilla (or flavouring of your choice)

Tbsp heavy whipping cream

Preheat oven to 350F. Grease and flour two 8&quot; cake rounds and line with parchment.

In a medium bowl, whisk flour, baking powder, and salt until well combined. Set aside.

Using a stand mixer fitted with a paddle attachment, cream butter and sugar on med-high until pale and fluffy (approx 3mins). Reduce speed and add eggs one at a time fully incorporating after each addition. Add vanilla.&nbsp;

Alternate adding flour mixture and buttermilk, beginning and ending with flour (3 additions of flour and 2 of milk). Fully incorporating after each addition.

Distribute batter evenly between the two pans. Place damp baking strips around the bottoms of the cake pans.

Bake for 30-35mins or until a toothpick inserted into the center comes out mostly clean.

Place cakes on a wire rack to cool for 10mins then turn out onto wire rack to cool completely.

Vanilla Cake:

Prepare a stand mixer with a whisk attachment. Whip butter until creamy.

Reduce speed to low and add in icing sugar 1 cup at a time until well blended. Increase speed to med and beat for 3 minutes.

Add vanilla and 2 Tbsp cream and continue to whip on medium for 1 minute. Add more cream as needed until desired consistency is reached.

Whip until the frosting is smooth and silky.

Vanilla Buttercream:

Place one layer of cake on a cake stand or serving plate. Top with approximately 1 cup of buttercream. Repeat with remaining layer and crumb coat the cake. Chill for 20mins.

Frost the top and sides of the cake and smooth with a bench scraper.

Decorate as desired.

Easy Homemade Vanilla Cupcakes Recipe

(163 grams) all-purpose flour

tsp salt

tbsp (84 grams) unsalted butter, room temperature

(155 grams) sugar

tbsp (30 milliliters) vegetable oil

tsp vanilla extract

eggs

milk

(224 grams) unsalted butter, room temperature

(460 grams) powdered sugar

½ tsp vanilla extract

water

Preheat oven to 350°F (176°C) and prepare a cupcake pan with cupcake liners.

Combine the flour, baking powder and salt in a medium sized bowl and set aside.

Add the butter, sugar, oil and vanilla extract to a large mixer bowl and beat together until light in color and fluffy, about 3-4 minutes. Do not skimp on the creaming time.

Now it&#8217;s time to add the eggs. Add the eggs one at a time, mixing until mostly combined after each. Scrape down the sides of the bowl as needed to be sure all ingredients are well incorporated.

Add half of the dry ingredients to the batter and mix until mostly combined.

Slowly add the milk and mix until well combined. The batter will look curdled, but that’s ok.

Add the remaining dry ingredients and mix until well combined and smooth. Scrape down the sides of the bowl as needed to be sure all ingredients are well incorporated. Do not over mix the batter.

Fill the cupcake liners about 3/4 full and bake for 15-18 minutes or until a toothpick inserted into the center comes out clean.

Remove cupcakes from the oven and place on a cooling rack to cool.

Vanilla Cupcakes

Add the butter to a large mixer bowl and beat until smooth.

Carefully pour in about half of the powdered sugar and mix until smooth and well combined.

Add the vanilla extract and 1-2 tablespoons of the water or milk and the salt to the frosting and mix until well combined.

Add the remaining powdered sugar and mix until smooth. Add additional milk or water as needed to get the right consistency.

Pipe the frosting onto the cupcakes. I used Ateco tip 844.

Cupcakes are best when stored well covered for 2-3 days.

I'm so glad to hear that! You can definitely make a layer cake with it. Here's the recipe for it in cake form - my Moist Vanilla Layer Cake. I bake it in three 8 inch layers, but you could do two 9 inch. Hi, I would love to try these they look amazing but I wish there was an eggless vanilla cupcakes recipe. My 3 year old is allergic to eggs. Can I replace eggs with anything else?

Wow, these turned out fantastic! I’m a diehard chocolate lover and have made a lot of your chocolate cupcake and cake recipes to rave reviews. My kids were looking for a non-chocolate change of pace so of course I came here first. Vanilla cupcakes have given me trouble in the past but these came out light and fluffy, with a perfect vanilla flavor. Nicely done as usual Lindsay!

These are soooooo good! I Made sure to measured by weight, sift the flour 3 times with the baking powder, bake un a light colored cupcake tin, use lowest speed setting after adding the flour. Resulted un moist, light cupcakes, way beyond my expectation. Didn't film too high for 15 flat cupcakes,great for decorating. Will shoot for 13 next time. Thank you so much for such a great recipe! Buttercream Frosting

vanilla (15 milliliters)

lb confectioner's sugar (454 grams)

unsalted butter (225 grams, room temperature)

tbsp heavy whipping cream (45 milliliters)

Whip the butter and salt for about a minute using a stand mixer fitted with a paddle attachment. You can use a hand mixer instead if needed.

Sift in the confectioner’s sugar in several batches beating on low after each addition. Scrape the bowl down and repeat the process. 

Add a tablespoon of the cream while mixing on low then add the vanilla. Beat until you have an even, fluffy consistency. You can add more cream or milk if desired for a thinner consistency.

Beat the softened butter over medium speed with an electric mixer until soft and creamy. Continue to beat over medium speed as you gradually add the powdered sugar. Stop the mixer and scrape down the sides of the bowl with a spatula as needed to fully incorporate all of the sugar.
