Each serving provides 617kcal, 15g protein, 80g carbohydrate (of which 14g sugars), 23g fat (of which 8g saturates), 15g fibre and	1.8g salt.

Grilled vegetable wraps with salsa and guacamole

Freekeh is dried green wheat, harvested while the grains are still soft, then sun-dried. It is very common in the Middle East and North Africa, and is used in the same way as bulgur, couscous or pearled spelt. It works well as an accompanying pilaf or a salad, in this case with pomegranate seeds, pistachios, mint and spring onion.

Freekeh salad

200 grams/7 ounces freekeh, pearled spelt or pearled barley

olive oil

spring onions, finely chopped

pomegranate, seeds only

pomegranate molasses

tbsp pistachios, roughly crushed

Muhammara is a vibrant Levantine dip that's sweet, nutty and tangy. it's really quick to whip up with roasted peppers from a jar, but tastes absolutely amazing if you roast fresh peppers on a barbecue or even a gas hob. Serve as part of a mezze with bread or as a sauce for kebabs, grilled meats and fish. Best eaten at room temperature.

Wonderfully flavoursome Grilled Vegan Kofta Skewers with Middle-Eastern-inspired flavours such as cardamom, cumin and turmeric. Easy to make with ready-made vegan mince and perfect for a last-minute BBQ addition.

Vegan Kofta Recipe

450 g vegan mince (I used Oumph!)

garlic

tsp coriander

salt

cumin

0.5 tsp ground black pepper

0.5 tsp ground allspice

turmeric powder

0.25 tsp ground cardamom

canola or sunflower oil

Place the vegan mince into a large mixing bowl and sprinkle in the seasoning: crushed garlic (or garlic paste), ground coriander, salt, cumin, black pepper, allspice, turmeric, and ground cardamom.

Thoroughly mix the spices into the mince with your hands until they are evenly distributed, then allow the mixture to rest for 10 minutes.

Take one skewer at a time and gently press a handful of the kofta mince mixture onto the top of the skewer. Give it a gentle squeeze until it sticks to the skewer, then carefully place the ready-made skewers aside whilst you prepare the rest.

Before placing the vegan kofta skewers onto the grill, generously brush them with vegetable oil (e.g. canola or sunflower). This will prevent them from sticking to your BBQ grill.

Grill them for 2-3 minutes on each side, flipping regularly, but carefully, to allow for an even browning, and once done, place them onto a kitchen towel to allow any excess oil to drip off.

Serve these delicious vegan koftas alongside a flavoursome yogurt dip, or remove them from the skewers and serve them in a soft, toasted flatbread.

Cook these veggie kebabs on the barbecue or under the grill.  If you're short on time use teriyaki sauce instead of the marinade and ready-made satay sauce in place of the dressing.

110 grams/4 ounces unsalted roasted peanuts, ground

150 milliliters/5fl oz coconut milk

½ lemon, juice only

These delicious vegan burgers are quick and easy to make. They can be prepared in advance and left in the fridge until you're ready to cook.

Each serving provides 717 kcal, 26.9g protein, 86.4g carbohydrate (of which 11.4g sugars), 24.6g fat (of which 2.8g saturates), 20.1g fibre and 1.63g salt.

These aubergine burgers can form part of a low-calorie diet of 1200–1500 calories a day.

wholewheat bread

1½ tbsp extra virgin olive oil

½ tsp ground coriander

This simple, quick salad is a vegan feast packed with chilli, herbs and spices. It’s also gluten-free and dairy-free.
