Easy, flavorful, and packed with plant protein, these sesame chickpeas are a vegan chickpea recipe that are a quick and delicious dinner the whole family will love. They're ready in just 15 minutes and are great to meal prep for the week.

Vegan Sticky Sesame Chickpeas

chickpeas

tbsp avocado oil or olive oil

sesame oil

low sodium tamari or soy sauce

maple syrup

tsp rice vinegar

ginger ginger

arrowroot powder

vegetable broth water (divided)

tsp red pepper flakes (optional

Drain and rinse the chickpeas and set aside. 

Mince the garlic and add to a sauté pan with the avocado or olive oil. I suggest using a garlic press so it's very finely minced and you don't end up with any large pieces in the sauce.

Sauté for a few minutes or until the garlic is very fragrant. 

In a small bowl combine the arrowroot powder and 2 tbsp of the vegetable broth and mix until no clumps remain. Set aside.

To the sauté pan with the garlic, add in the low sodium soy sauce, sesame oil,  maple syrup, rice vinegar, ginger, and the additional 2 tbsp of vegetable broth. Whisk together. 

Add in the arrowroot mixture and stir. 

When bubbles start to form, add in the chickpeas and stir until they are well coated. 

Cook on low heat until the sauce becomes thick and sticky, about 5 minutes. stirring occasionally.

Remove from the heat and let sit to allow the chickpeas to absorb all of the flavor. 

Serve with steamed broccoli, quinoa, or my instant pot rice and enjoy!

Healthy Baked Falafel [+ Air Fryer]

garbanzo beans

Preheat your oven to 350 degrees F (177 degrees C).

Drain and rinse the garbanzo beans. Place them in the bowl of a food processor, wiz on high for 20 seconds.

Place all of the remaining ingredients into the food processor. Wiz until you have a doughy texture.

Use a spoon, scoop out a golf-ball-sized piece and place it on a parchment paper-lined baking sheet. Line out the entire batch, about 10-12 balls. Slightly flatten with your palm or a spatula.

Bake for 25-30 minutes or until firm. Do not flip while cooking.

I served mine on pita with fresh lettuce, parsley, and tomatoes. Top with a tahini mixture (equal parts water and tahini paste with a squirt of lemon). Trader Joe&#39;s tahini is already mixed and ready to use.

4-Ingredient Dinner: Coconut Chickpeas, Tomatoes and Greens

cooked chickpeas (2 15-oz cans, drained)

tomatoes (1.5 cups, 400 grams)

coconut milk (1.5 cups, 400 grams)

Combine the chickpeas, diced tomatoes, coconut milk, and salt in a large pot or deep skillet over medium-high heat. Add garlic powder and red pepper flakes if using. Stir well.

Bring to a boil and reduce to a simmer. Cover and simmer on low heat for about 20 minutes.

Add the washed and chopped greens and stir well. Cook uncovered until the greens are just wilted and bright green, about 3-8 more minutes, depending on the greens you're using. 

Taste for seasoning and serve! Can top with fresh parsley. 

Serve as is, or with noodles or rice of choice, prepared according to package directions.

Sautéed Chickpea Recipes

Open canned chickpeas, rinse under running water then dry on a clean kitchen towel. Heat olive oil in a skillet/frying pan on medium heat.

Add chickpeas and sauteed until it turns golden crispy on the surface. Before adding the spices, turn the heat to very low to prevent spices burnt. Add ground turmeric, paprika, garlic powder, and salt. Mix until chickpeas are well coated (no more than 2-3 minutes to avoid burning the spices). .

Add lemon juice (optional, leave out if you prefer crispy texture) and stir.

Turning off the heat then finish it with chopped parsley. Serve as a side dish or with salad or rice.
