Tbsp chia seeds

Preheat the oven to 180 degrees Celsius (360 F)

Soak the chia seeds in water, set them aside for 15- 20 minutes until they have gelled.

Blitz the rolled oats in a food processor to make oat flour.

If your coconut oil is solid, heat until melted.

Whisk together the dry ingredients (flour, oat flour, baking powder, cinnamon,salt) in a large mixing bowl.

Whisk together the wet ingredients (maple syrup, date syrup, melted coconut oil, vanilla, and soaked chia seeds).

Add the wet ingredients to the dry ingredients. Mix until combined, the cookie dough will be quite wet Refrigerate the dough for at least 30 minutes (this can be longer) you just need the dough to become more solid so that you can scoop spoonfuls.

Drop spoonfuls of the dough onto a baking paper-lined tray (I use heaped tablespoons and get 12-14  cookies per batch. Bake at 180 degrees Celsius (360 F) for 12 minutes, or until golden brown on the bottom.

Cool on a rack, before transferring to an air-tight container.

Preheat the oven to 350F.

In a large mixing bowl, whisk together flax meal, water, oil, sugar, molasses and vanilla until smooth. Mixture should look like caramel sauce.

In a separate small mixing bowl, combine flour, baking soda, and salt.

Add dry ingredients to wet ingredients. Stir until combined. (This will take a little elbow grease. Dough will be quite thick. To avoid over-mixing, stir until flour is just incorporated.)

Fold in the vegan chocolate chips.

Dump the cookie dough into a well-seasoned, 10" cast iron pan. Press evenly into pan.

Place the pan on the middle rack in the oven and bake for 28 to 35 minutes, or until edges are golden and middle has firmed up somewhat to the touch. When pressed, the dough in the middle of the pan should give a little, but a tester should come out clean.

Allow the cookie to cool and slice into wedges.

Preheat the oven to 350ºF. Line a small baking sheet with parchment paper.

In a small bowl, whisk together almond butter, maple syrup, coconut oil, and vanilla extract.

Add the flour, oats, salt, and baking soda and stir until completely incorporated.

Add the chocolate chips and stir one more time to combine.

Scrape the dough into a ball and place on the prepared parchment paper, flattening slightly if necessary. I like to press a few chocolate chips into the top of the cookie. Sprinkle with flaky sea salt if desired.

Bake 8-9 minutes or until just starting to dry out on top. The cookie should still be soft. Allow to cool 5 minutes on the baking sheet before enjoying.

With a spoon or your scoop, lightly press down on the dough to form a cookie shape. (These cookies do not spread out in the oven, so form them before baking.)

Bake for 22-25 minutes (more or less depending on your oven and size of cookies.) I take them out when the tops are lightly browned.

Let cool for 5-10 minutes before serving. (They will slightly firm up.)

Wow!  These are fantastic!  I made them this afternoon as part of my prep for the week, and I’m so happy I tried this recipe.  They were very easy to make and I used an ice cream scoop like you suggested, which made it so much easier to portion the batter.  Plus, they are a good sized cookie! I added a tad of allspice to bring out the banana flavour as well.  Yum! Thanks for sharing this delicious recipe!
