This easy vegan laksa only takes just 15 minutes to prepare, and it’s bursting with flavour from the coconut milk, chilli and turmeric. It’s a filling meal, warming starter or easy side dish.

Recipe: Easy Vegan Laksa

spring onions ((scallions) roughly chopped)

garlic

red chilis (deseeded and chopped)

tsp ginger (chopped)

tsp turmeric

tsp oil

1000 ml (4 cups) vegetable stock/broth

coconut milk (400 milliliters/15 ounces can)

g (1 cup) bean sprouts

baby corn (halved)

g (1 cup) mangetout beans

150 g (5 oz) rice noodles

lime

cilantro/coriander

Add the spring onions, garlic, chilli, ginger and turmeric to a mini food processor and whiz until it forms a rough paste.

In a large pot over a medium heat, add the oil and spice paste and fry, stirring, for 3 minutes.&nbsp;

Add the stock and coconut milk and bring to the boil. Reduce the temperature to low and add the bean sprouts, baby corn and mangetout. Cook for 5 minutes.

Meanwhile, cook the rice noodles according to packet instructions (usually pouring boiling water over them in a bowl for 3 minutes, then draining).

Divide the noodles between bowls and add the hot soup. Top with some fresh coriander and a squeeze of lime.

Easy Vegetarian Laksa

tbsp Laksa paste (can sub Thai red or yellow curry paste)

curry powder

lemongrass,

Litre vegetable broth

full-fat coconut milk

tamari (can sub soy sauce)

brown sugar

noodles

pack tofu,

Preheat a large pot on the stove on medium-high heat then add the Laksa paste and curry powder and let toast for 30 seconds. 

Add the lemongrass, broth, coconut milk, tamari and brown sugar to the pot and bring to a boil mixing everything together, then cover and let simmer for 10 minutes.

Add the cooked noodles, soft tofu and bok choy to the soup and bring to a boil letting everything cook together for 5 minutes.

Nice and easy! I did cheat and used Thai Green paste (with added Turmeric!). Didn’t have BokChoi, just used the greens (Broccoli and Coriander) we had in the fridge.

This came off good, using the Thai Red Curry paste and following the instructions.  A good recipe for a quick meal.

Easy vegetarian Laksa

This Malaysian-inspired vegan laksa is a must-try! Featuring chewy noodles cooked in a rich and aromatic coconut broth, it will leave you wanting more. This warm and cozy noodle dish is perfect for colder evenings.

Creamy Vegan Laksa

lemongrass ((or 2 tablespoons lemongrass paste))

candlenuts (or 1/4 cup macadamias/cashews/hazelnuts)

3-4 chilies (roughly chopped)

red onion (roughly chopped)

ginger (roughly chopped)

galangal (roughly chopped (optional))

turmeric powder

vegetable broth

coconut milk

soy sauce (or tamari/shoyu)

sugar

tofu puffs (sliced)

servings rice vermicelli ((or rice noodles/lo mein noodles))

Preparing lemongrass - Peel away the tough outer leaves using your fingers, then slice 2 inches off the lower bulb to get the inner white core. Roughly chop them into smaller pieces before using them.

Place all ingredients needed to make the paste in a food processor. Blend until smooth.

For laksa paste

Heat a tablespoon of oil in a Dutch oven over medium-high heat. Fry laksa paste for 10-15 minutes to reduce and brown it, stirring frequently.

Add broth and coconut milk. Bring the mixture to a boil, and lower the heat to a gentle simmer. Let it cook for 15 minutes.

When the time is up, add tofu puffs to the pot and cook for another minute.

Stir in soy sauce and sugar, and add salt to taste.

Making laksa broth

While the soup is cooking, cook your noodles according to the package instructions. Drain and rinse them under cold water.

For noodles

Divide the noodles into 4 bowls, and add tofu puffs, bean sprouts, cilantro, and sliced red chilies. Ladle soup over noodles. Serve your vegan laksa while warm.

Malaysian Curry Noodle Soup

(about 12 grams) kombu ((see Note 1))

(50 grams) Chinese light soy sauce ((see Note 2))

wakame seaweed ((optional))

coriander seeds

cumin seeds

shallots (roughly chopped)

garlic cloves, (chopped)

2- inch (5cm piece) galangal, (very thinly sliced (see Note 3))

1- inch (2.5cm) piece fresh turmeric, (peeled

lemongrass, (smashed and finely chopped (see Note 5))

(25 grams) roasted cashews ((or peanuts))

soy sauce

cilantro

neutral-flavored oil

(227 grams) oyster mushrooms, (torn into strips (see Note 6))

Sea salt ((or kosher salt))

(13.5-ounce 400 milliliters) can full-fat coconut milk

curry leaves

(8-ounce 227 grams) package fried tofu puffs or soy puffs

coconut sugar

limes

mint leaves, cilantro, and/or Thai basil leaves

Thai chiles, (thinly sliced (for spicy!))

Bean sprouts

Chinese chili oil / chili crisp

Make the broth. Cut a few slits in the kombu to release the flavor. In a small or medium saucepan over medium heat, bring 5 cups of water (1.2 L), the kombu, wakame (if using), and soy sauce to a simmer. Gently simmer for 10 minutes, then remove from the heat and stir in 1 tablespoon lime juice. The broth should taste like the sea.a. Fit a medium or large bowl underneath a colander and strain the broth, discarding the kombu and wakame.

Optional - toast the whole spices. Heat a dry frying pan over medium heat. Once hot, add the coriander and cumin seeds. Cook, stirring or shaking the pan frequently, until aromatic and a few shades darker. Remove from the heat to prevent burning.

Make the laksa paste. In a food processor or small-capacity high-powered blender (a 32 ounce/1 L or smaller blender cup), add the coriander and cumin seeds, shallots, garlic, galangal (or ginger), turmeric, chile peppers, lemongrass, cashews or peanuts, soy sauce, cilantro, lime zest, and lime juice. Blend until a paste forms, stopping to scrape down the sides as you go.a. Add the oil (or water) gradually, 1 tablespoon at a time, until a paste comes together (it won’t be completely smooth but try to get it as smooth as you can).b. Tip: Don’t stick your eyeballs directly over the blender or they’ll water!

In a Dutch oven or soup pot, heat the 2 tablespoons oil over medium-low heat. After several minutes / once the pan is hot, add the Laksa Paste and cook, stirring frequently to prevent sticking, until it just starts to dry out, 5 to 8 minutes.

Pour in the Broth, scraping up any browned bits stuck to the bottom. Add the mushrooms, ¼ teaspoon sea salt, and the leftover lemongrass stalks (if using; see Ingredient Notes). Bring to a boil, then lower the heat and simmer rapidly for 10 minutes.

Use a slotted spoon to discard the whole lemongrass pieces, if used. Add the coconut milk, curry leaves, and tofu puffs. Simmer for 5 minutes. Taste for seasonings, adding a few dashes of soy sauce or salt as needed. Taste, adding the sugar to taste.

While the soup simmers, cook the noodles according to the package directions. Drain and keep warm.

Assemble. Divide the noodles among four bowls. Ladle hot curry on top and add desired garnishes. Squeeze fresh lime juice on top. Add optional toppings.
