Delicious Vegan Lettuce Wraps are filled with Teriyaki Mushrooms and brown rice- an easy Asian-inspired lunch idea or appetizer that is healthy, vegan and satisfying. Gluten-free Adaptable! Made with Homemade Teriyaki Sauce.

Shiitake Lettuce Wraps

oil (avocado, peanut, or wok oil)

(5 oz) cremini mushrooms, cut into ½ inch chunks

(3 cloves) garlic, minced

ginger, minced

salt

scallions chopped

Teriyaki Sauce

cilantro,

butter lettuce

rice

Garnishes: toasted sesame seeds, furikake or chili flakes

In a large skillet, heat oil over medium high heat and saute mushrooms for  7 -8 minutes, until tender and golden. Remove the mushroom mixture from the pan and set aside.

Add bell peppers, garlic and ginger to the same pan and cook about 2 minutes on medium high heat, adding a bit more oil if needed.

Add mushrooms back in pan along with salt, scallions and ¼ cup of teriyaki sauce.  Stir to combine. Remove from heat.  Allow to cool 10 minutes.  Stir in cilantro.

 Place lettuce cups on a plate or platter and fill with 2-3 tablespoons cooked rice or grain (optional). Spoon Teriyaki Mushrooms over top.

Top with toasted sesame seeds , furikake or  more warmed teriyaki sauce in a bowl, to spoon over top.

This is exactly what I was looking for... something light and fresh and luckily we had all the ingredients. Served over quinoa. Perfect.

Another winner.  One good side of being stuck at home is trying lots of new recipes.  This was delicious. Your Teriyaki Sauce is a must of course.  The only change I made was reducing oil a tad.  Thank you for so many excellent vegan options.  I cannot wait to make this for book club when we can  be together again. I made this along with your recipe for the Citrus Salad with dates and Pistachios, and it was amazing! I will make it again! So delicious - and the two dishes really complimented each other with their flavors. My husband is vegan, so it was perfect and my kids added some grilled chicken.

Made this with the citrus salad as per the suggestion of another commenter and all plates in my house were totally devoured. So good for a meatless evening!

Freaking amazing!! I altered the recipe slightly by only using two cups of mushrooms and then replacing the other half with seitan crumbles to add more protein. I also left out the rice as the seitan made it more heavy. The teriyaki sauce is so good and so simple! Definitely going to the top of my rotation!

Salad: Wash the vegetables, chop them, place in a mixing bowl. Add olive oil, vinegar, and salt to taste.

Assemble your bowl: Salad, rinsed and drained chickpeas, the olives, quinoa. In the middle/on top: 2 tbsp hummus and 1 tbsp tzatziki + freshly ground black pepper. Ready.

Smashed Chickpea Avocado Sandwich -VEGAN, FAST and Healthy....... and oh sooooo satisfying! The best part? Whip it up in 5 minutes flat!

Smashed Chickpea Avocado Sandwich

avocado

chickpeas

scallions, finely slided

pepper

cayenne or chili flakes

light squeeze of lemon juice

whole grain bread

Optional Additions – sprouts, radish,grated carrots, cucumber, fresh herbs

Place avocado and oil in a bowl and mash with a fork until relatively smooth. Add chickpeas and mash with fork. Stir in scallions, salt, pepper, cayenne and lemon juice to taste. Add optional herbs.

Pile on a piece of whole grain bread, top with sprouts and the other slice. Cut in half, and perhaps share&#8230; this makes a hearty sandwich!

I made this and not only was it easy, it was delicious!  Highly recommend it!

So good! I ended up using half a can of chickpeas (so a bit more than half a cup) and chipotle chili pepper in place of the cayenne. I spread it on whole grain naan and topped with spinach and tomato slices. I could eat this every day!

I made this sandwich without the chick peas and just mashed 1/2 of an avocado, added some chopped red onion and celery.  Sprinkled it with about 1/4 of juice of a lemon, salt and pepper.  Spread it on Dave's Seed Bread, added a few slices of cucumber, and used avocado mayo.  Yum!  Thanks for the inspiration.  So quick, easy and delicious!

Delicious.  Since this recipe makes 2 servings, I halved the ingredients and served it openface on 1 slice of multigrain bread, sliced cucumbers, and a bed of baby spinach.  Sprinkled with smoked paprika.  This will be a regular lunch for me, thank you!

Made as shown with addition of chopped red pepper, daikon radish, carrot..  In a wrap lined with hummus was excellent!

Wow. Just wow. Such a healthy and delicious recipe that is good to the last bite! Highly recommend adding chilli flakes if you like some heat, and I also used chipotle olive oil instead of regular for extra spice. Made half the recipe into a wrap and still had a bit of the filling left over on the side! Just as good in the wrap as it is by itself. Thank you for this! Going to be a new regular on the lunch menu for sure.

Put together four adult sized lunches in just 30 minutes with this Meal Prep Veggie Stir Fry, and you'll have produce-packed, plant-based lunches to enjoy all week long!

soy sauce

rice wine vinegar

brown sugar

cornstarch or arrowroot powder

Heat a wok or other large, deep skillet over high heat. Fill with 1/2 inch of water, and then add the broccoli. Steam the broccoli until just bright green and slightly tender, about 5 minutes. Remove broccoli with slotted spoon and set aside, drain remaining water, and wipe wok clean.
