Six ingredients are all you need to make these Almond Butter Protein Balls. These are great pick-me-up snack to fuel your body and curb your sweet tooth cravings. Cocoa, shredded coconut, almond butter, and more make the most incredible bite-size vegan protein balls. 

Almond Butter Protein Balls

coconut

almond butter

almond meal

maple syrup

tbsp cocoa powder (or cocoa protein powder if desired)

tbsp chia seeds

Mix Wet

Place the almond butter, maple syrup, and activated chia seeds in a medium bowl. Mix together well.

Mix Dry

Add the almond flour, cocoa powder, almond meal and coconut (left some for the end!).

Make Dough

Roll Balls

Coat Balls

Lightly roll each ball in shredded coconut.

Store

Store in the refrigerator for up to 2 weeks or keep in the freezer for 4 months.

These 5 ingredient vegan protein balls are super easy to whip up and perfect for meal prep. They make for a great post-workout or on-the-go snack. Dairy-free + gluten-free.

Vegan Protein Balls

½ cups old fashioned rolled oats

vanilla protein powder ((50-60 grams))

Tablespoons mini chocolate chips

Combine

Place oats, almond butter, maple syrup, protein powder and chocolate chips in a large bowl.

Form

Stir to combine. Getting the mixture to combine takes a little arm muscle and it may seem too thick at first, but it will come together as you keep mixing. I used my hands to knead the dough near the end and that seems to help.

Once combined, use a small cookie scoop to scoop and form the dough into balls.

Store in a covered container in the fridge or freezer.

Chocolate Peanut Butter Energy Balls

115 gms (or) 1 cup Oats Flour

155 gms (or) ½ cup Peanut Butter

21 gms (or) ¼ cup Desiccated Coconut

gms (or) 2 Tablespoons Unsweetened Cocoa Powder

gms (or) 3 Tablespoons Maple Syrup (adjust to taste)

Place the oats flour, peanut butter, desiccated coconut, cocoa powder and maple syrup in a bowl. 

Stir until well combined. 

Scoop the mixture out with a spoon and roll it into a ball. 

Place the rolled ball in a lined baking sheet. 

Continue the process with the remaining mixture. 

Refrigerate these chocolate peanut butter energy balls for 1 hour or just until the balls are set.
