An easy recipe for Vegan Ramen Noodles made with a delicious broth and vegetables. Make it in the Instant Pot or on the stovetop, it comes together in just 15 minutes!

Instant Pot Ramen with Vegetables

Noodles

Sesame Oil

Garlic (finely chopped)

inch Ginger (finely chopped)

Scallions (chopped)

Yellow Onion (chopped)

Cabbage (chopped)

Carrots (diced)

Grams Mushrooms (sliced)

Vegetable Stock (or use

Rice vinegar

Brown Sugar

Sriracha (adjust as per your spice tolerance)

Bok Choy (rinsed, cut lengthwise)

Set the Instant Pot to Saute mode. Add sesame oil and let it heat up. Add the chopped garlic, ginger, onion, and scallions and saute for 3 minutes.

Then add the chopped veggies - I have used mushrooms, cabbage, and carrots here. Saute for another 2-3 minutes.

Turn off the Instant Pot, add the veggie broth, brown sugar, soy sauce, and sriracha.

Add the ramen noodles (discard the ramen seasoning). Then add the rice vinegar and give it a mix.

Seal the Instant Pot and set the pressure-cooking cycle to 3 minutes. After the cooking cycle is complete, immediately quick-release pressure and let the valve drop down.

Once the pressure has released, and the valve has dropped, add in the bok choy and give it a mix. The bok choy needs just a few minutes in the hot ramen to be cooked.

Instant Pot Ramen with Vegetables is now ready. Serve it with a garnish of chili oil and sesame seeds.

This Ramen Noodle Stir Fry comes together in just 15 minutes for a quick and easy meal!

Ramen Noodle Stir Fry

vegetable oil

green onions, chopped

garlic cloves, finely chopped

bok choy, chopped

packs of ramen noodles (any type you like, gluten-free if needed)

tbsp sesame seeds

tbsp dark soy sauce

tbsp light soy sauce

tsp sesame oil

tbsp sweet chili sauce

tsp sambal oelek (or sriracha)

Heat the vegetable oil in a pot or pan on medium-high heat, then add the green onions, garlic and bok choy. Cook for 3-4 minutes until the bok choy is tender.

While the bok choy is cooking, mix the sauce ingredients together in a small bowl.

Boil the ramen noodles just until they begin to come apart and are slightly soft, then drain and add the noodles and sauce to the pot, mixing everything together on medium heat for 2-3 minutes. 

Serve topped with some sesame seeds and sliced green onions

This recipe is perfect and definitely a crowd pleaser. I customized it a little bit using a mixture of Simple Truths Fettuccine and spaghetti noodles, &amp; instead of bok choy I used Spinach. Since I added more noodles, of course I had to portion the ingredients to the correct taste of this recipe. Portioning was big enough for a family of 5 and there were even extras. Next time, I'm going to add shrimp to it :) Definitely recommend trying this recipe!! You will not regret it!

Super easy to make! I got all the ingredients from Walmart easily and it takes at most 30 minutes to do. My roommates love this meal and I do too.

I love this recipe. I am a salad eater and always have bell peps, mushrooms, onions, sugar snap peas, on hand.  I like the baby bok choy and some napa cabbage and doubled the sauce. Loved it. I did use low sodium on one of the soy sauces. It was sooooo good.  Someone on a review said they were going to add shrimp. I am going to try that too.  I had surprise company and this is what we had. They all loved it and ask for the recipe. Thanks again. This one goes into my favorites file.

I made this tonight.  Love it.  I modified it by first stir-frying some thinly sliced chicken breast (mixed with soy sauce and sesame oil first). Then the veges and the noodles.  
I didn't have sweet chili sauce so used garlic chili sauce instead.  This made it spicy, which I always enjoy.

Easy and full of flavor, this ramen noodle stir fry is a 20 minute dinner you&#039;re going to love. Keep it vegetarian or add your favorite protein for a simple recipe that&#039;s perfect for meal prep.

ramen noodles (2 blocks)

broccoli, bok choy

edamame

garlic (2 1/2 tsp minced)

ginger (can sub

green onions/scallions (just the white part for the stir fry)

tbsp oil (vegetable

tbsp vegetable or chicken broth

tsp toasted sesame oil

tbsp sriracha (more or less depending on spice preference)

Cook noodles

*please read notes before starting!* Bring a large pot of water to a boil and cook noodles according to package instructions.

Ramen noodles cook quickly, usually taking only 2 minutes, longer if they are gluten free. Careful not to overcook or they can end up really chewy/soggy.

Saute garlic

Add the olive/vegetable oil, minced garlic, scallions and grated ginger to a pan.

Saute ginger

Saute until the garlic is golden brown and fragrant. Add in the edamame and vegetables. Saute until the vegetables are fork tender or wilted, depending on what you used.

Whisk the sauce

Whisk together all sauce ingredients in a small bowl.

Combine ingredients

Combine the cooked noodles, sauce and vegetables. Let combine over very low heat to allow the flavors to blend.

Taste and adjust flavors as desired. I usually add more soy sauce because I like it salty/saucy!

Serve with sesame seeds and the remainder of the chopped scallions. Enjoy!

Quick, easy, and oh-so-delicious! These peanut butter noodles are ready in less than 20 minutes and full of essential nutrients.

Peanut Butter Ramen Noodles

avocado oil (or extra virgin olive oil)

onion

thumb ginger (diced)

garlic (diced)

tbsp peanut butter (sub for seed butter

tbsp sriracha (or chili sauce)

maple syrup

tsp rice vinegar

2½ tbsp soy sauce (tamari if gluten-free)

vegetable broth

coconut milk

noodles noodles

lime (juiced)

375 gram extra firm tofu (1 block,

cilantro (or parsley, chopped)

red chili (sliced)

onions

peanuts (crushed)

If preparing tofu, slice your block into cubes, place on a parchment-lined baking sheet, spray with a little oil, and bake for 15 to 20 minutes at 400F, until crispy on the outside. 

Meanwhile, prepare your soup. In a large pot, add the oil, onion and ginger. Saute until fragrant, approximately 3 minutes. 

Then add the garlic, peanut butter, chili sauce, maple syrup, rice vinegar and soy sauce, along with around 1/4 cup of the broth. Mix until the sauce is creamy. 

Add the remaining broth and coconut milk, then bring to a boil. Add in your noodles, and cook until they’re al dente. Alternatively, you can cook your noodles separately and serve with the rest of your toppings.
