A savory, cheesy Vegan “Tuna” Melt made with smashed chickpeas! The perfect quick lunch companion for soups and salads. Just 30 minutes and 9 ingredients required!

Easy Vegan “Tuna” Melt

Easy Vegan Cheddar Cheese ((or sub 4-8

mayonnaise

tsp dijon mustard

sea salt and black pepper

Tbsp finely chopped shallot ((or sub red onion))

Tbsp finely chopped dill pickles

bread

Tbsp vegan butter ((for buttering bread // we like Miyokos))

If you want to use the Easy Vegan Cheddar Cheese and haven’t already made it, start making it now. Then it’s sandwich time!

Thoroughly rinse and drain your chickpeas and pat them dry with a clean kitchen towel to remove excess liquid. Place the chickpeas in a medium mixing bowl and use a potato masher or fork to mash them until no large pieces of chickpeas remain but before it becomes too smooth or pasty — you want some texture.

To the chickpeas, add the vegan mayonnaise, mustard, salt and pepper, shallot, and pickles, and mix thoroughly. Taste and adjust, adding more mayonnaise for creaminess, dijon for brightness, or black pepper for a kick.

Heat a medium cast iron or non-stick skillet over medium heat.

In the meantime, butter one side of each slice of bread. Once the skillet is hot, place a slice of bread butter side down in the pan, then carefully spread a semi-thick layer (3-4 Tbsp) of vegan cheddar cheese on the bread (or place a slice or two of cheese down if using store bought). Top the cheese with a heaping 1/3 cup of the vegan “tuna,” spreading it out evenly with a fork. Place another slice of bread, butter side up, on top of the “tuna.”

Cook the sandwich over medium heat for 2-3 minutes, peeking at the underside of the bread to see if it’s getting nicely toasty. Once the bottom slice of bread is golden, flip! Cook for another 2-3 minutes, until both sides are nice and golden brown and crispy and the cheese appears melty and gooey (covering the pan can help melt the cheese; lower the heat as needed if browning too quickly).

Repeat with remaining bread, cheese, and “tuna.” Then enjoy! These sandwiches pair beautifully with soup or salads.

Best when fresh. Chickpea “tuna” can be made ahead and stored in a sealed container in the refrigerator for 2-3 days. Not freezer friendly.

Looking for vegan sandwiches? This delicious chickpea salad sandwich features a vegan chicken salad using chickpeas!

Vegan Chickpea Salad Sandwich (&amp; More!)

rib celery

green onions

vegan mayonnaise or cashew cream

lemon juice

celery seed

Kosher salt & fresh ground pepper

bread (try our Homemade Bread)

Lettuce, spring green mix, or sprouts

Hummus, optional

Thinly slice the celery (if it&#8217;s a large rib, cut in half lengthwise first). Thinly slice the green onions.

Drain and rinse the chickpeas. In a medium bowl, smash the chickpeas with a fork.

Combine the chickpeas with the chopped celery and green onions, mayonnaise, lemon juice, and celery seed. Add about 1/4 to 1/2 teaspoon kosher salt, depending on your chickpea brand and taste preferences, and fresh ground pepper to taste. Taste and salt until the flavor pops! If the salad is dry, add more mayonnaise (cooked chickpeas have a drier texture than canned).

Assemble the chickpea salad sandwich: If desired, spread the bread with hummus (this amps it up a bit but not required). Top the sandwich with lettuce or greens and chickpea spread.

Vegan sandwiches are a nutritious lunch idea for kids and adults. These 3 recipes are dairy free and gluten free, and all of them have plant based protein.

3 Vegan Sandwiches with Plant-Based Protein (Gluten Free)

gluten free hot dog buns

In a small bowl, mash together the chickpeas and avocado. Mix in your olive oil, lemon, garlic, and spices. Taste and adjust as needed.

Place leafy greens in the center of each hoagie. Spoon 1/4 c avocado mash on top of each hoagie topped with diced tomato and cilantro. Salt and pepper to taste.

If taking the sandwich to go, wrap in foil or store in glass lunch box. For meal prep, make the avocado mash 1 day ahead, store in small container in fridge. Add to hoagie sandwiches when ready to plate/eat.

Smashed Chickpea Avocado Salad Hoagies

In a small bowl, mix the hummus, everything seasoning, and olives. Set aside.

Schmear a thin layer onto each bagel bottom and top with the everything hummus mixture. Then layer the cucumber, bell pepper, 2 tbsp more of everything hummus mix, then sprouts, and fresh basil. Salt/pepper to taste

If taking the sandwich to go, wrap in foil or store in glass lunch box. For meal prep, make the hummus mix may be made 1 -2 days ahead, store in small container in fridge.

Everything Green Bagel Sandwich

Mix together the maple syrup and cinnamon.

Schmear almond butter on top of each slice. About 1.5 tablespoons on each. Next spread the the cinnamon and maple syrup. Add sliced strawberries on top. Mint is optional.

For a warm toast, roast the strawberries!

Brush sliced strawberries with maple syrup and sprinkle cinnamon on top. Place on baking sheet (lined) and roast at 400F for 12 -15 minutes 6-7 strawberries brush with honey/maple and pinch of cinnamon on top

These vegan sandwiches are made with tangy balsamic roasted beet slices and slathered in a creamy dairy-free cashew cheese.

Balsamic Roasted Beet Sandwiches with Creamy Dill Cashew Cheese

beets

balsamic vinegar

cashews

unflavored soy or almond milk

dill

sandwich bread (optionally toasted)

lettuce leaves

Preheat the oven to 400°F.

Lightly rub the outsides of the beets with olive oil, then set them on a sheet of aluminum foil. Wrap up the foil to cover the beets, and place the entire foil packet into the oven. Bake until the beets are easily pierced with a fork, about 1 hour. Remove the beets from the oven, open the foil, and allow them to to sit until they're cool enough to handle.

Once the beets are cool, rub the outsides to remove the skin. It should come off easily.

Cut the beets into thin (1/4 inch or less) slices and place them into a medium bowl. Drizzle with balsamic vinegar and sprinkle with salt and pepper.

Make the balsamic roasted beets:

Place the cashews, milk, lemon juice, and garlic into a blender or the bowl of a food processor fitted with an S-blade. Blend until smooth, stopping to scrape down the sides of the bowl or pitcher as needed. You can thin the mixture with some additional milk if needed. Season with salt and pepper to taste, then add in the dill and pulse until incorporated into the mixture.

Make the creamy dill cashew cheese:

Slather the bread slices with the creamy dill cashew cheese, then pair them up and stuff them with beet slices, onion slices, and lettuce. Serve.

Vegan Bombay Cheese Sandwich with Chutney

wholemeal bread

Mix the grated cheddar with mayo until well combined.

Spread each slice of bread with mango chutney.

Now to build your sandwich. First add your cheese mixture to both your sandwiches and spread evenly.

Top with salad leaves (and tomato or cucumber too if you like), then top with Bombay mix.

Top with your other slice of bread, cut in half and enjoy!

Preheat the oven to 375 F. Arrange the bread on a baking sheet and toast in the oven for 5 to 8 minutes, until lightly browned, or use a toaster.

Meanwhile, in a medium bowl, mash the chickpeas with a potato masher into a chunky paste.

Mix in the celery, onion, pickles, carrot, parsley, capers, and seaweed.

In a small bowl, make the dressing by mixing together the plant-based mayonnaise, mustard, miso paste, lemon juice, soy sauce, and nutritional yeast until smooth.

Stir the dressing into the chickpea mixture.

To make a sandwich, spread ½ cup of the filling across 1 slice of toasted bread. Top with 1 lettuce leaf, 2 slices of tomato, and 2 additional pickle slices. Top with another slice of bread. Continue until you have 6 sandwiches. Slice them in half diagonally and serve immediately.

If you think of vegan sandwiches as boring, be ready to be blown away. These healthy vegan sandwich recipes elevate the veggie sandwich to an entirely different level. Yet, they are incredibly simple to make and are the perfect everyday lunch idea.

2 Best Vegan Sandwich Recipes

bread (wholegrain)

sun-dried tomatoes

red onion (thinly sliced)

Pit and peel half of the avocado, slice it and, cover it with lemon juice.

Top the bread with the hummus, place the avocado sliced on top and sprinkle with salt and pepper. Then add a layer of sliced tomatoes, the sun-dried tomatoes cut into small pieces, red onion, and greens. Then finish it off by topping with the remaining bread slice.

Avocado Sandwich

Add all the chickpea salad ingredients in a bowl and mash with a masher or a fork until you reach a creamy consistency (alternatively, place all the ingredients in a food processor and pulse until combined, making sure not to puree the filling too much). Taste and adjust seasoning as needed.

Assemble the chickpea salad sandwich: spread the chickpea salad on the bottom slice, top it with the veggies, season with a bit of salt and pepper, press with the other slice of bread, and enjoy!

Chickpea Salad Sandwich

Looking for a tasty sandwich bursting with flavour? Try these pickled vegetable sandwiches with cream cheese using the quick pickling method.

Pickled Vegetable Sandwiches with Cream Cheese

bread bread bread

garlic ((you won't use it all))

cheese garlic cream cheese))

carrot

cucumber ((peeled, leaving aside the wet seeds

white wine vinegar

caster sugar

salt & pepper

salad leaves

tomato ((sliced))

sriracha ((optional, see notes for alternative drizzles))

First, make the pickled veggies. Add the slices of carrot and cucumber to a mixing bowl with the vinegar, sugar, salt and pepper.

Mix well, then set aside.

Toast your bread.

Rub one side of each slice of toasted bread with a clove of garlic, to impart lots of flavour.

Top one slice of your toasted bread with a thick layer of cream cheese and a thin coating on the other slice.

Add a layer of salad leaves (to the slice with a thick layer of cream cheese), then half the pickled vegetables (draining as much liquid off as possible as you lift them out of the bowl with a fork).

Now, add a layer of sliced tomato and season with black pepper,

Finish with a drizzle of sriracha (look at my tips above for other drizzle ideas).

Top with the other spread slice of toasted bread and cut in half before serving. Make another sandwich with the same filling.
