This Vegan Waldorf Salad is the perfect combination of crisp, creamy, sweet, and tangy! The classic 19th-century Waldorf Astoria salad recipe with nut-free, allergy-friendly updates using apples, celery, grapes, sunflower seeds, and a sweet eggless mayo dressing! A quick and easy chilled appetizer or side dish for any occasion and easily customized!

Vegan Waldorf Salad

Diced Tart Apples (about 2 cups)

Cup Grapes (halved)

Cup Diced Celery

Cup Roasted Unsalted Sunflower Seeds

TB Vegan Mayo (store-bought)

Lemon

Tsp Sweetener (optional)

Tsp Salt

Wash and dice your unpeeled apples before adding them to a large mixing bowl. Toss them with the lemon juice.

Stir the salt and optional sweetener into the vegan mayo before adding the mayo, halved grapes, diced celery, and sunflower seeds to the bowl of apples.

Toss everything to fully coat in the mayo.

I have never actually made a Waldorf salad before. I know the version with walnuts. But love yours. Looks really interesting and I think it is time I try making it as well. Looks really yummy. :-)

unocooked farro (yield 3 to 3/12 cups cooked)

water

salt

cashew mayo

Tablespoons apple cider vinegar

dijon mustard

maple syrup

red onion

Tablespoons chopped fresh dill

apples, chopped into bite-sized pieces (I used honey crisp)

grapes

celery (diced)

walnuts

raisins

Salt and pepper

Tablespoons parsley

(if using)

Cook 1 cup farro according to package directions

Combine ingredients in a high-speed blender (yields 2 cups)

Will last in the refrigerator for 7 days

Cashew Mayo

Combine 1/4 cup cashew mayo, maple syrup, dijon mustard, and apple cider vinegar; whisk together and set aside.

Dresssing

Prepare all vegetables and put them in a large bowl.

Add nuts and raisins or dried cranberries.

Add dressing and stir to mix well.

Add cooked, cooled farro is using.

Refrigerate for an hour before serving.

I'm obsessed with this vegan Waldorf salad. The dressing is so creamy, but is healthier and lighter than the traditional one.

romaine lettuce leaves

red grapes

green apple

celery

unsweetened plant based yogurt

tbsp tahini

lemon juice

herbs de provence

tsp salt

black pepper

Chop all the ingredients and place them in a large bowl.

To make the dressing just mix all the ingredients in a bowl until well combined.

Pour the dressing into the salad, mix well and serve.

If you're not going to eat the salad immediately, keep the dressing and the salad ingredients separately and mix them just before serving.

Used this receipe but instead of yogurt I used hummus! Added some maple syrup &amp; it's delicious! I thinned 1/2 it for a single serving salad &amp; the rest I'll use as a dip.

Delicious recipe. Thank you!  I didn’t have yogurt so I whipped up some cashew cheese and thinned it with water to get the mayo like consistency. Also allergic to grapes, so I subbed in craisens. Amazing.
