This hearty vegetarian chili recipe includes a variety of seasonings such as roasted red peppers, smoked paprika, and nutmeg and will even satisfy your carnivorous friends.

Homemade Vegetarian Chili Recipe 

Beyond

avocado oil

yellow onion, small diced

(15 oz) can roasted diced tomatoes

chili powder

chipotle powder

smoked paprika

onion powder

nutmeg

kidney beans,

vegetable stock

orange juice or apple cider vinegar

maple syrup

Saute Your Mirepoix 

In a saucepot on medium-high heat, add avocado oil or olive oil, minced garlic, diced onion, celery, and carrot. Stirring occasionally cook for 3 to 5 minutes or until the onions begin to brown. 

add Chili Powders, Spices, Roasted Peppers, and Beyond Meat

Once the meat and vegetables have browned, add in the spices and roasted red peppers and cook for 1 minute until aromatic and stir to combine. Stir in the crumbled Trifecta meat patties and cook for 3 minutes or add 16 ounces of beyond meat and cook for 5 minutes.

Add Stock, Diced Tomatoes, and Beans

Continue to cook on medium-high heat and add vegetable stock to release any of the brown bits stuck to the pan, then stir in the diced tomatoes and beans; bring to a boil, then reduce the heat to a simmer cook for 10 minutes. Season with orange juice or apple cider vinegar, a pinch of salt or pepper is desired then dig in!

Sweet Potato Black Bean Chili

olive oil

onion (diced)

garlic (minced)

celery

tomato paste

tbsp chili powder

oregano

tsp cumin

paprika

salt

black beans (1 can, rinsed and drained)

oz diced tomatoes with chilies (1 can)

sweet potato (about 1 large or 2 medium; diced small)

corn

veggie broth

Heat Oil

In a large pot, heat olive oil over medium heat then add onion, garlic, and celery.

Cook Veggies

Cook until veggies start to soften, about 4–5 minutes.

Add Seasonings

Add in tomato paste, chili powder, oregano, cumin, paprika, and salt and cook an additional 1–2 minutes.

Add Remaining

Stir in the black beans, diced tomatoes, sweet potato, corn, and vegetable broth.

Boil Chili

Simmer Chili

Turn heat down and simmer for 45 minutes or until the sweet potatoes are soft.
