20 minute chopped Asian with orange-sesame miso dressing is a healthy make-ahead vegetarian main or side-dish served with your protein of choice.

Chopped Asian Salad with Orange-Sesame Miso Dressing

cabbage

matchstick carrots

red bell pepper, julienned

chow mein noodles

edamame

cilantro

green onion

jalapeño, seeds and ribs removed, thinly sliced (optional)

sesame seeds

salt

orange juice ((from 1 orange))

Tbsp. tahini

Tbsp. rice vinegar

Tbsp. white miso paste

Tbsp. honey

Tbsp. toasted sesame oil

Prepare dressing by combining all ingredients in a medium bowl or glass jar. Use an immersion blender, frother, or whisk to mix until smooth and creamy. Taste and season with a pinch of salt, if needed.

Combine all salad ingredients in a large bowl, and lightly season with kosher salt. Pour dressing overtop, and toss to combine. Garnish with toasted sesame seeds, if desired.

This recipe was a huge hit! No leftovers at all! Such a simple recipe and the combination of flavors was delicious. I will definitely be making this again.

Fantastic! I only wanted to eat one serving so I opted to keep dressing on the side and I’ll add the dressing serving by serving as the week goes on (same with the noodles). So good!

Vegetarian Chopped Salad with Dried Figs and Avocado

arugula (chopped)

Romaine lettuce (chopped)

Mann’s Power Blend Superfood Slaw®

cherry tomatoes (sliced in half)

red bell pepper (cored, seeded and diced)

yellow bell pepper (cored, seeded and diced)

cucumber

chickpeas (rinsed and drained, 1 can)

blueberries

Orchard Choice®

avocados (diced)

hemp seeds

lime juice

olive oil

tahini

scallion (chopped)

sea salt

black pepper

water (to thin as necessary)

Prepare the Fig and Tahini dressing: Place all dressing ingredients in a high-speed blender and blend on high until smooth and creamy. Add water to thin dressing, as necessary. Pour into a jar and set aside.

Prepare the vegetarian chopped salad: Add all ingredients (except avocado and hemp seedto a large bowl. Gently toss to combine. Pour in dressing (note, you may not need to use all the dressinand toss to coat.

Sprinkle with hemp seeds and add in avocado.

Dish out veggie chopped salad and enjoy!

Chopped Thai Salad

garlic (peeled)

soy sauce

water

rice wine vinegar

honey

chili garlic sauce

sesame oil

ginger

lime

baby kale

carrots (shredded)

bell peppers (thinly sliced)

cilantro leaves

green onions

cashews (roughly chopped)

avocado (diced)

mango (diced)

Whisk the dressing ingredients together in a small bowl and set aside.

Cook the edamame according to the package directions. Drain and allow it to cool.

Meanwhile, combine the kale, carrots, peppers, cilantro leaves, and green onions in a large bowl.

Add the cooked edamame, cashews, avocado, and mango to the bowl with all the ingredients. Pour the dressing over the salad and toss to combine. Serve immediately.

This was a hit for my whole family (6 and 7 year old approved!). 

Followed the recipe as it was written and wouldn't change a thing!

So amazing. I didn’t add the cashews, mangos or avocado but I bet that would make it ever more delicious. I absolutely love the dressing!

My daughter made this for dinner tonight for us and it was delicious !! Perfect balance of sweet, creamy, crunchy, spicy, nutty goodness! The dressing was the bomb . She topped it with blackened shrimp , and the extra spice was the perfect addition . Thanks again Gabi for another great recipe !!

Looks amazing and I am making it for dinner with grilled salmon. Substituting spinach and cabbage for kale.  Can't wait!  (Looks like garlic needs to be minced since vinaigrette isn't going to be blended...)

This salad was a fresh dinner hit tonight! Made a few substitutions (spinach instead of kale, almonds instead of cashews) just with what I had on hand. Fresh sourdough on the side :)

Honestly, a perfect salad. I'm not a huge mango fan so I usually leave it out and it still has a nice balance of flavors.
