20 minute chopped Asian with orange-sesame miso dressing is a healthy make-ahead vegetarian main or side-dish served with your protein of choice.

Chopped Asian Salad with Orange-Sesame Miso Dressing

cabbage

matchstick carrots

red bell pepper, julienned

chow mein noodles

edamame

cilantro

green onion

jalapeño, seeds and ribs removed, thinly sliced (optional)

sesame seeds

salt

orange juice ((from 1 orange))

Tbsp. tahini

Tbsp. rice vinegar

Tbsp. white miso paste

Tbsp. honey

Tbsp. toasted sesame oil

Prepare dressing by combining all ingredients in a medium bowl or glass jar. Use an immersion blender, frother, or whisk to mix until smooth and creamy. Taste and season with a pinch of salt, if needed.

Combine all salad ingredients in a large bowl, and lightly season with kosher salt. Pour dressing overtop, and toss to combine. Garnish with toasted sesame seeds, if desired.

This recipe was a huge hit! No leftovers at all! Such a simple recipe and the combination of flavors was delicious. I will definitely be making this again.

Vegetarian Chopped Salad with Dried Figs and Avocado

arugula (chopped)

Romaine lettuce (chopped)

Mann’s Power Blend Superfood Slaw®

cherry tomatoes (sliced in half)

red bell pepper (cored, seeded and diced)

yellow bell pepper (cored, seeded and diced)

cucumber

chickpeas (rinsed and drained, 1 can)

blueberries

Orchard Choice®

avocados (diced)

hemp seeds

lime juice

olive oil

tahini

scallion (chopped)

sea salt

black pepper

water (to thin as necessary)

Prepare the Fig and Tahini dressing: Place all dressing ingredients in a high-speed blender and blend on high until smooth and creamy. Add water to thin dressing, as necessary. Pour into a jar and set aside.

Prepare the vegetarian chopped salad: Add all ingredients (except avocado and hemp seedto a large bowl. Gently toss to combine. Pour in dressing (note, you may not need to use all the dressinand toss to coat.

Sprinkle with hemp seeds and add in avocado.

Dish out veggie chopped salad and enjoy!
