This creamy miso udon is loaded with garlic, onion, and mushrooms sautéed in butter to create a delicate cream sauce to pair with your udon noodles. Garnished with nori and green onions, this one-pan creamy udon is so comforting and delicious, it will easily become your weeknight go-to.

15-Minute Creamy Mushroom Miso Udon

servings (500 grams) udon noodles (preferably frozen (see notes below))

tbsp butter

garlic (minced)

onion

mushrooms

oyster sauce (or soy sauce)

heavy cream (or evaporated milk)

tbsp miso paste (white

green onion and shredded seaweed/nori (for garnish)

To prepare frozen udon noodles, run hot water over them for a few seconds, using a pair of chopsticks to carefully loosen the noodles. Rinse with cold water, drain, and set aside.

Heat butter in a large pan over medium heat and add garlic and onion. Cook until aromatic, and add mushrooms. Add about 2 tbsp of water and oyster sauce to the pan and sauté for a few minutes until the mushrooms are lightly browned.

Add heavy cream and miso paste, and mix to combine. Bring the sauce to a boil, add the noodles and toss until evenly coated, and season with salt and pepper to taste. Garnish and enjoy!

15-Minute Yaki Udon (Stir-Fried Udon Noodles)

servings (17-oz./500 grams) udon noodles (preferably frozen (see notes below))

tbsp vegetable oil (divided, add more if needed)

shrimp

cabbage (shredded)

carrot (cut in matchsticks)

green onions (chopped, some reserved for garnish)

sesame seeds, green onions,

tbsp dark soy sauce

tbsp oyster sauce

mirin

tbsp honey (or brown sugar)

water

tsp Gochugaru (or red pepper flakes, optional)

Season the shrimp with salt and pepper. Combine all sauce ingredients in a small bowl.

To prepare your noodles from frozen, soak them in hot water for about a minute, and use a pair of chopsticks to carefully loosen the noodles. Rinse with cold water, drain, and set aside.

Heat a wok or a large pan over medium heat and add vegetable oil and shrimp. Cook for about 2-3 minutes until pink. Remove and set aside.

In the same wok, add vegetable oil, onion, and cabbage, and sauté for a few minutes until the edges are golden brown, for about 3-4 minutes. Add garlic, carrot, and mushrooms, and continue to cook for about 1 minute.

Add the cooked shrimp, udon noodles, and sauce, and toss them together until the noodles are evenly coated and caramelized. Add green onions and mix to combine. Garnish with sesame seeds and green onions and enjoy!

Easy Vegetable Udon Noodle Soup

sesame oil (divided)

asparagus spears (chopped)

soy sauce (divided,

white miso paste

ginger

vegetable broth

udon noodles

baby bok choy (halved)

scallion (chopped)

Add 1 teaspoon sesame oil to a skillet over medium heat. Add asparagus and cook for 2-3 minutes or until asparagus is fork tender. Add 1 tablespoon soy sauce during&nbsp; the last minute of cooking. Remove from skillet and set aside.

Add remaining teaspoon sesame oil and add mushrooms. Cook for 2-3 minutes, adding 1 tablespoons soy sauce during the last minute.  Remove from skillet and set aside.

Add remaining tablespoon soy sauce, miso paste, garlic, ginger and vegetable broth to a medium sized pot. Bring to a simmer over medium heat, stirring until miso paste dissolves.

&nbsp;Add udon noodles and bok choy and simmer for 2-3 minutes or until noodles are cooked. Taste broth and add more soy sauce if desired. Transfer to a bowl and garnish with scallions.
