veggie traybakes

Briam is a Greek slow-cooked roast vegetable dish. No need to fry, no need to stir and you can use any vegetable you have in the fridge. It's also vegan and gluten-free! Serve it as a side or main course.

Cornish briam (roasted vegetable traybake)

150 milliliters/¼ pint extra virgin rapeseed oil

400 grams/14 ounces carrots, sliced lengthways

courgettes (about 400 grams/14 ounces), sliced lengthways

onion,

5-6 garlic cloves, sliced

300 grams/10½oz Tenderstem broccoli

tomatoes

parsley,

thyme, leaves picked

200 milliliters/⅓ pint passata

salt and black pepper

A lokanta or 'tradesmen's restaurant' is where you can find delicious home-cooked style food in Turkey – such as this healthy, vegan, roasted vegetable stew with butterbeans.

A simple vegetarian bake made with mozzarella and aubergine will out-class any lasagne ready-meal. Serve with crusty bread. This is designed to be a low cost recipe.

This nourishing traybake combines roasted spiced chickpeas with plenty of veg before stuffing into pittas and drizzling in minty yoghurt sauce – an easy, flavour-packed dinner for any day of the week.

These protein-packed stuffed peppers make a filling vegetarian meal. If you don’t like goats' cheese these they also work well with feta. 

With a GI of 41 this meal is <a href="https://www.bbc.co.uk/food/diets/high_protein_low_GI_diet">high protein, low GI</a> and provides 373 kcal per portion.

Rustle up a moreish veggie traybake full of roasted vegetables and halloumi. An oregano dressing and easy tzatziki take it to another level. Dr Rupy's recipe costs just over £1 per portion.

Each serving provides 626 kcal, 24g protein, 38g carbohydrate (of which 15g sugars), 40.5g fat (of which 18.4g saturates), 7g fibre and 2.8g salt.

Donal's aubergine parmigiana is so easy to make and tastes wonderful. It's simpler than a lasagne and lighter, too. The tomato sauce can be doubled and frozen for another easy dinner. 

Each serving provides 390 kcal, 20g protein, 14g carbohydrate (of which 13g sugars), 24g fat (of which 11g saturates), 6.5g fibre and 1.3g salt.

I never feel the need to apologize for using jars of chargrilled peppers, for while I don’t eat them just as they are, I find them the most useful ingredient. Just make sure that you are using peppers that are preserved in oil rather than brine. The potatoes don’t roast in this oil, so much as braise: they will crisp up in parts, but mostly just become softened and rich in the sweet peppery juices.

Just make sure that you are using peppers that are preserved in oil rather than brine. The potatoes don’t roast in this oil, so much as braise: they will crisp up in parts, but mostly just become softened and rich in the sweet peppery juices.

Don’t be modishly alarmed by the double-carb combo: it can be an alcohol-sopping salve, much appreciated at this time of year. Besides, it is important to remember that the original predates central heating.
