You can be as fancy as you like in the kitchen, but if you don't know the basics, you'll never get anywhere.  And one basic I have been working on for a long time is the perfect basic vinaigrette.  I've written a million and one times about the restaurant Le Relais de l'Entrecôte in Paris, which now has an outpost (as yet untested by me!) in New York.  It's a steak frites place, but they bring you this amazing green salad with mustard dressing and walnuts to start, and it was that dressing I was dying to emulate.

The Secret Ingredient (Dijon Mustard): Simple Vinaigrette Recipe

Dijon mustard

white wine vinegar

Kosher salt

black pepper

Extra virgin olive oil

In the bottom of a large salad serving bowl, whisk together the mustard, vinegar, salt, and pepper with a small whisk until the mixture is completely homogenous.  If you don't have a whisk, use a fork.  Add the olive oil, and whisk again until completely homogenous and emulsified.  Tumble enough salad for four people on top, and toss gently to dress.

Note: This recipe can easily be scaled up or down, and lasts forever in the fridge. If you have plastic squeeze bottles, there's no need to first whisk in a bowl—construct the dressing in the bottles using the same ratio...

Soy-Balsamic Vinaigrette Recipe

garlic,

dijon mustard

shallot,

canola oil

olive oil

Balsamic vinegar

Sherry vinegar

soy sauce

salt and black pepper

Combine all ingredients in a large bowl and whisk. Season to taste with salt and pepper. Transfer to sealed container. Shake vigorously to emulsify before each use.

ml c. à soupe) de vinaigre balsamique

ml c. à soupe) de jus de citron

ml c. à soupe) de sirop d’érable

90 ml c. à soupe) d’huile d’olive ou de canola

gousse d’ail, hachée finement

Sel et poivre

Dans un bol, mélanger à l’aide d’un fouet la moutarde, le vinaigre, le jus de citron et le sirop d’érable. Verser l’huile en mince filet tout en fouettant jusqu’à ce que la texture soit crémeuse. Ajouter l’ail. Saler et poivrer.

Cette vinaigrette accompagne bien les laitues vertes, douces ou amères, et les mescluns.

wow! il y a très longtemps que je cherchais une vinaigrette pour la salade verte! elle est super je me fais une autre salade ce soir!
