Vinegar based coleslaw is an excellent no mayo coleslaw recipe for those who love coleslaw but don&#x27;t love mayonnaise. It&#x27;s an easy combination of cabbage, carrots and onion mixed with an apple cider vinegar dressing.

Vinegar Coleslaw Recipe (No Mayo Coleslaw)

green cabbage (finely shredded)

carrot (grated)

onion

apple cider vinegar

olive oil

tbsp honey ((or more, depending on sweetness))

Dijon mustard

tsp celery seed

tsp salt

tsp black pepper

Add the shredded green cabbage, carrot and onion to a large bowl.

In a smaller bowl, whisk together the apple cider vinegar, Dijon mustard, honey, olive oil, celery seed, salt and pepper to create the dressing. Taste the dressing and decide if you&#x27;d like to add more honey.

Add about half of the dressing to the cabbage, onions and carrots and gently toss. Slowly add more dressing until you’ve reached your desired consistency.

Serve and enjoy!

cabbage

white vinegar

sugar

salt

mustard

Mix the shredded cabbage and sliced onion in a large bowl.

To make the dressing, boil the remaining ingredients on stove, whisking to combine until sugar has dissolved completely.

Pour hot dressing on top of cabbage and onions; stir to coat.

Refrigerate for at least two hours before serving; stirring occasionally to redistribute dressing.

This easy vinegar coleslaw recipe is a refreshing summer side dish that pairs well with veggie burgers, sloppy joes, skewers, and more!

Easy Vinegar Coleslaw Recipe

celery

red onion

rice vinegar

cider vinegar

dill

chili powder

black pepper

Thinly slice the cabbage and measure out 8 cups. Thinly slice the onion and the celery.

In a medium bowl, whisk together the rice vinegar, cider vinegar, dill, chili powder, and kosher salt. Whisk in the olive oil tablespoon by tablespoon until a creamy emulsion forms. 

In a large bowl, toss the cabbage, red onion, and celery with the dressing. Add ground black pepper to taste, and additional salt as necessary. Serve immediately. (Note: The slaw is best served the day that it is made; leftovers do not save well. One idea is to only add dressing to the vegetables that you plan to eat.)

STEP BY STEP:
Remove any outer layers of the cabbage that seem tough or are not fresh, and discard them.
With a large chef's knife, slice off the root of the cabbage.
Cut the cabbage in half through the stem.
Cut the cabbage into quarters.
Remove the root of the cabbage by cutting it out diagonally.
Thinly slice the cabbage in the short direction, using a circular motion with the knife. (Since typically shredded cabbage for coleslaw doesn't need to be in long pieces, slicing it in the short direction makes it easier to eat!)

Tablespoon honey

Salt and pepper (to taste)

Add cabbage and carrot to a large bowl.

Whisk together apple cider vinegar, honey, olive oil and salt. Pour over cabbage mixture.

Toss well to combine. Season with additional salt and pepper, to taste.

This simple summer cabbage salad is dressed with a lemon and sumac dressing and mixed with bell pepper, green onion, and parsley.

Salatet Malfouf - Lebanese Red Cabbage Salad

red bell pepper, very finely chopped

green onions, finely chopped

parsley

juice of half a lemon ((roughly 1-2 Tbsp))

Tbsp rice vinegar (or apple cider vinegar)

granulated sugar ((or sugar alternative of your choice))

sumac

¼ tsp white pepper

In a small jar, combine all of the dressing ingredients (lemon juice, vinegar, sugar, salt, sumac, and white pepper). Shake to combine.

In a bowl place your chopped cabbage. Add your dressing and massage it into the cabbage for around 30 seconds. Add the other vegetables and mix thoroughly. Taste and adjust salt if necessary. Enjoy!
