Ricardo's recipe : Quinoa and Cheddar Cheese Stuffed Squash

Quinoa and Cheddar Cheese Stuffed Squash

acorn squash

olive oil

tsp (10 ml) honey

(125 ml) quinoa,

onion, chopped

garlic, chopped

harissa paste

red bell pepper, peeled, seeded and diced

(125 ml) roasted peanuts, chopped

(60 ml) raisins

(180 ml) grated cheddar cheese

tbsp (30 ml) cilantro, chopped (optional)

With the rack in the middle position, preheat the oven to 400 °F (200 °C). Line a baking sheet with parchment paper.

Cut the squash in half. With a spoon, remove the seeds. Brush the flesh with the oil. Season with salt and pepper. Place the squash on the baking sheet, cut side down.

Bake for 40 to 45 minutes or until the squash is tender. Right out of the oven, brush the inside of the squash with the honey.

Meanwhile, in a pot of salted boiling water, cook the quinoa for 12 to 15 minutes or until tender. Rinse under cold water and drain well. Set aside.

In a skillet, brown the onion and garlic in the oil. Add the harissa and mix thoroughly. Add the quinoa, bell pepper, half of the peanuts and the raisins. Warm over medium heat, stirring frequently. Add 1/2 cup (125 ml) of the cheddar and the cilantro. Season with salt and pepper.

Spoon the stuffing into the squash halves. Sprinkle with the remaining cheese and peanuts. Bake for about 10 minutes or until the cheese has melted and squash is warm.

Love, love, love this recipe! Tasty, light yet filling, amazing flavour. I substituted a couple of ingredients like dried apricots instead of raisins (because that's what I had in the house), but it is absolutely wonderful. I will definitely do it again (and again and again). Thank you Chef Ricardo!

This recipe is OUTSTANDING! The salty sweet combo and nutty flavours and quinoa and peanuts are sublime! I use dry roasted salted peanuts  and substitutes sirarcha once when i ran out of harissa paste

Nice that only salt and pepper are added for spice. The real flavor comes from the melange of ingredients. I didn’t have peanuts so used almonds. Delicious.

Ricardo's recipe: Sweet Potato and Tofu Patties

Sweet Potato and Tofu Patties

(250 g) sweet potatoes, peeled and grated

oz g) firm tofu,

(120 g) feta cheese, crumbled

eggs, lightly beaten

cup g) unbleached all-purpose flour

2 onions, chopped

cup g) cilantro, finely chopped

coriander seeds

cayenne pepper

tbsp ml) vegetable oil

cup ml) tzatziki sauce

With the rack in the middle position, preheat the oven to 350°F (180°C). Line a baking sheet with a silicone mat or parchment paper. 

In a large bowl, combine all of the ingredients except the oil. Lightly season with salt and pepper. 

In a large non-stick skillet over medium heat, cook a few patties at a time in the oil, using ¼ cup (60 ml) of the mixture for each, and flattening them as they cook. Brown on both sides, then drain on paper towels before placing on the baking sheet. 

Bake for 10 minutes or until cooked through. 

Patties

Meanwhile, in a small bowl, combine the tzatziki and mint. Season with salt and pepper. Serve the patties hot or at room temperature with the sauce and, if desired, a green salad.

Sauce

I am not crazy about tofu as it is OGM I would switch 
to chickpeas or lentils healthier.

Keeping Herbs Fresh

Eggplant Parmigiana

large eggplants, cut lengthwise into slices ½ inch (1 cm) thick

onion, finely chopped

garlic cloves, chopped

(28 oz/796 ml) crushed tomatoes

basil leaves, torn

½ cups (150 g) mozzarella cheese, grated

(55 g) Parmesan cheese,

Preheat the oven to 425°F (220°C). Place the first rack in the lowest position of the oven and the second in the middle position. Line two baking sheets with parchment paper.

Place the eggplant slices on the baking sheets and brush with the oil on both sides. Season with salt and pepper. Bake for 15 minutes or until tender.

Eggplants

Meanwhile, in a pot, soften the onion and garlic in the oil. Add the tomatoes and simmer for 10 minutes. Season with salt and pepper.

Tomato Sauce

Cover the bottom of a 13 x 9-inch (33 x 23 cm) baking dish with ½ cup (125 ml) of the tomato sauce. Top with one-third of the eggplant slices. Cover with 1 cup (250 ml) of the tomato sauce and 4 basil leaves. Sprinkle with ½ cup (50 g) of the mozzarella and ¼ cup (20 g) of the Parmesan. Repeat with the remaining ingredients.

Bake for 25 minutes or until the cheese is golden. Serve with grilled pork chops, pan-seared veal cutlets or store-bought roasted chicken, if desired.


Assembly

Very time consuming. Not 20 minutes of prep time as indicated.

Beef and Macaroni

(625 ml) macaroni

oz (227 g) small white button mushrooms, quartered

In a large pot of salted boiling water, cook pasta until <i>al dente</i>. Rinse under cold running water. Drain and set aside.

In the same pot, cook vegetables in oil for 5 to 10 minutes. Add meat and crumble with the back of a spoon until golden brown. Add remaining ingredients and macaroni. Stir until macaroni has absorbed liquid. Adjust seasoning.

Je trouve ça fascinant comment le monde capote avec le nom comme si Ricardo l'avait inventé. Le nom date des années 30 comme le pâté chinois. Excellente recette!

Je viens de faire cette recette ce soir, et toute la famille a aimé. Et très simple à faire.

Je trouve que le nom du plat est un peu insultant. Le goût pardonne toute! Mais je pense qu'il faut y aller léger sur la soya, des fois trop c'est comme pas assez. En ajouter plustre au besoin!

Bonne recette faite avec du poulet haché, du bouillon de poulet et la moitié de la sauce soya.

Washing Mushrooms

Quick and Easy Pizza

60 ml (1/4 cup) olive oil

ml (2 tbsp) tomato paste

2.5 ml (1/2 tsp) dried oregano

2.5 ml (1/2 tsp) balsamic vinegar

garlic,

naan bread

375 ml (11/2 cups) grated mozzarella cheese

In a bowl, combine all the ingredients. Season with salt and pepper.

With the rack in the middle position, preheat the oven to 210 °C (425 °F). Line a baking sheet with parchment paper.

Spread the sauce on the bread. Scatter the toppings and cheese on the bread. Place on the baking sheet and bake for 10 to 12 minutes or until the cheese has melted.

Pizza

Excellente recette par erreur j'ai mis une tomate à la place de l'huile et finalement jai doublé l'ail et mis 2 c.a thé de origan et Vinaigre et aucune Huile et c'était tellement bon que je garde cette recette.

Dégustation de pizza ce soir en mélangeant différentes recettes de Ricardo. 3 sauces au menu: Sauce à fondue au cari, sauce à fondue rosée, et la sauce à pizza traditionnelle. Avons utilisé le smoked-meat de la recette de pizza au smoke-meat (un autre délice de Ricardo)... Comme quoi la réduction du gaspillage alimentaire est possible avec toutes ces belles recette :-)

Parfait!
Même si la sauce ne parait  pas être très liée, le résultat est PARFAIT!
J’ai fait une version végé; poivrons grillés, oignons caramélisés, artichauts marinés, olives noires, quelques câpres, champignons rôtis, brocolis.

la sauce est super bonne, il faut juste mettre moins d'huile pour que tous les ingrédients se lient ou sinon mettre la même quantité d'huile et doubler les autres ingrédients,si vous aimer un peu plus de sauce, doubler la recette sauf pour l'huile, c'est excellent!

Merci Ricardo pour  vos suggestions. Aujourd'hui j'ai fait votre pizza  minutes en y apportant quelques changements. J'y ai mis des légumes  grillés (champignons poivrons et courgettes) j'ai ajouté un mélange d'épinards tombé et ricota  et bien sur du mozzarella pour finir. Ce fut un véritable succès. J'ai travaillé pendant 44 ans comme cuisinier aujourd'hui à la retraite et toujours passionné par la cuisine. Merci encore pour votre inspiration.

Délicieux! La sauce est si simple et si bonne. Et le pain naan, miam! Nous avons adoré. Je mis du smoke meat et de la saucisse de sanglier.

Cette recette est parfaite. Je l'ai utilisée une trentaine de fois et je n'ai plus jamais eu à  acheter les pizzas de l'épicerie ;)
La sauce est excellente, parfois j'utilise de la sauce tomate à la place de la pâte de tomate, juste pour alterner 

Pork Chops with Creamy Mushroom Orzo

pork chops, 3/4 inch (2 cm) thick

tbsp butter

lb (225 g) white mushrooms, quartered

tbsp (15 ml) whole-grain mustard

chicken broth

(200 g) orzo

(180 ml) 15% cooking cream or 35% cream

(140 g) baby spinach

In a large, deep non-stick skillet over medium-high heat, brown the meat in 2 tbsp of the butter for 3 minutes on each side. Season with salt and pepper. Set aside on a plate.

In the same skillet, brown the mushrooms in the remaining butter for 4 minutes. Add the garlic and mustard. Cook for 1 minute while stirring. Add the broth and orzo. Bring to a boil and cook for 6 minutes or until the orzo is al dente, stirring a few times. Add more broth as needed. Season with salt and pepper.

Pour the cream into the skillet and let reduce slightly. Add the spinach and mix to combine. Return the pork to the skillet. Coat in the sauce and reheat for 2 minutes. Adjust the seasoning.

Serve the pork chops with the orzo and mushrooms. Serve with a green salad, if desired.

Vraiment une très bonne recette à refaire . Très facile  et le goût est excellent.

Délicieux, rapide, peu de vaisselle. Onctueux à souhait même avec la crème 15%.

Vraiment très bon et si simple à faire! Les quantités pour la sauce était parfaite de mon côté. J’ai enfin trouvé une bonne recette à faire avec des côtelettes de porc, lorsqu’elle sont en spéciales. C’est vrai que ça pourrait être tout aussi délicieux avec des poitrines de poulet.

J'ai ajouté du romarin frais et un peu moins de bouillon. C'est une recette que je vais refaire et qui est facile a personnaliser en remplaçant le porc par du poulet ou en ajoutant du basilic ou du persil. Excellent!!

Très bon et  facile à faire, ça ressemble a un rizotto il ne manque que le fromage, je vais même l'essayer

J’ai préparé la recette tel quel mais remplacé les côtelettes de porc par des poitrines de poulet tranchées sur l’épaisseur. Succès à la maison. À refaire absolument! Merci Ricardo et toute l’équipe!
