This easy One-Pot Creamy Chicken Marsala Pasta is a weeknight comfort food recipe your whole family will love!

One-Pot Creamy Chicken Marsala Pasta

olive oil

½ lbs raw boneless skinless chicken breasts (cut into small bite-sized chunks)

oz sliced white mushrooms

garlic

Marsala wine

butter

all-purpose flour

salt

black pepper

skim milk

chicken broth

oregano

thyme

oz dry whole wheat pasta (I used rotini)

oz Parmesan cheese (freshly shredded)

parsley

Drizzle 1 tablespoon of the oil in a 5 QT Dutch oven or large pot and bring to medium-high heat. Add the chicken to the hot oil and sprinkle with a bit of salt and pepper. Cook, stirring occasionally, for 6-8 minutes until cooked through and browned. If chicken releases liquid while cooking, drain and discard the liquid as needed so the chicken will sauté, not steam/boil. Add the garlic, the mushrooms, and 3 tablespoons of the marsala wine and stir together. Cook for 2-4 minutes, stirring occasionally, until the mushrooms are soft. Remove the chicken/mushroom mixture to a side plate and cover with aluminum foil to keep warm.

Lower the heat to medium and add the butter to the pot. When the butter is melted, whisk in the flour, salt and pepper until combined with the butter (will form a paste). Cook that for about a minute and then slowly whisk in the milk a little at a time to combine it smoothly with the flour mixture. When smooth, add the broth, the remaining marsala wine, the thyme and oregano, and whisk to combine, scraping up any remaining browned bits on the bottom of the pot.

Increase the heat to med-high and stir occasionally until boiling. Add the pasta and reduce the heat to med-low. Cook for 10-12 minutes uncovered, stirring every couple minutes to avoid sticking.

When the pasta is cooked and the sauce is thickened, stir in the Parmesan cheese. Reduce the heat to low and add the reserved chicken and mushrooms back to the pot. Stir everything together and cook for another couple minutes to ensure the reserved ingredients are warm. Sprinkle with parsley and serve.

Drizzle the olive oil in a large sauté pan or skillet that has a lid and bring over med-high heat. When the oil is hot, add the onion, celery and carrots and stir together. Spread the mix out in the pan and cook, stirring occasionally, for 5-6 minutes until the onion is translucent and the vegetables are softer. Add the minced garlic and stir. Cook for another 30-60 seconds. Add the rice and stir together to mix. Cook for another minute to toast the rice a bit.

Pour in the broth, stir, and raise heat to bring to a boil. Cover the pan with a lid and reduce the heat to low. Simmer on low for 45 minutes until the rice is tender and the broth is absorbed. Uncover, fluff the rice and sprinkle the parsley over top to garnish.

Pour the water and ¼ teaspoon of the salt into a medium saucepan. Cover and bring to a boil over high heat. Once boiling, quickly stir in the cup of couscous, cover the pot and remove from heat. Keep covered for 5 minutes. After 5 minutes, transfer the couscous to a serving bowl and fluff with a fork. Allow to cool.

In a small mixing bowl, combine the vinegar, olive oil, lemon juice, oregano, dried basil, onion powder, garlic powder, black pepper, mustard, and the remaining ½ teaspoon of salt. Stir or whisk together until combined and set aside.

In the serving bowl holding the cooled couscous, add the chickpeas, cucumber, cherry tomatoes, olives, Feta cheese, basil, chives, and parsley and stir until combined. Pour the dressing from step two over the top and stir until the salad is evenly coated with the dressing and serve.

¼ teaspoon smoked paprika

¼ teaspoon crushed red pepper flakes

99% turkey breast

Stir together all of the spices in a small dish until thoroughly mixed. Place the ground turkey in a mixing bowl and add the spice mixture. Using clean hands or a fork, mix the spices into the ground turkey until well combined. If possible, cover and refrigerate for at least an hour, or overnight so flavors can meld.

If making patties: Split the turkey mixture into eight balls, 2 ounces each. Press the balls into patties, about ½ inch thick. Mist a large griddle pan or skillet with cooking spray and bring over medium heat. When hot, place the patties on the pan in a single layer, not touching each other. Cook for 4-5 minutes and then flip. Cook on the other side for anther 4-5 minutes until cooked through.If making crumbles: Mist a large skillet or sauté pan with cooking spray and bring over medium heat. Add the turkey mixture and cook, breaking it up into small chunks for 4-5 minutes until cooked through.

The seasonings are great, but I found I needed much more of them. I will try increasing by 2 - 2.5 times. Maybe even more salt.

Gotta expect some variants on your recipe, right? Let me say up front that you have a great basic spice approach for this. Definitely deserves the 5-star rating even tho I change many things.

I'm a fat-adapted eater (very low carb*) and grind my own chicken sausage from thighs + skin, using your recipe w/ more red pepper flakes (like 3-4x), using Korean gochugaru, which are a "fruitier" flavor... also ~1/2 tsp cayenne. In addition, I use smoked Hungarian paprika. I have Old Guy taste buds and need some kick.

All this gets "kneaded" into the chopped-up chicken to sit overnight before the grind (your notion that meat needs to "steep" in spices is dead on).

Absolutely delicious!!! I wasn't a ground turkey fan but this recipe has changed my mind.

Really tasty, even with the salt cut by half.  I added about 1/2 cup of finely grated apple to add sweetness and moisture.  It was still pretty dry, but served with the low fat French toast with maple/applesauce syrup it was fine.

I followed this recipe exactly as written. I didn't have marjoram so I used oregano instead.  I decided to let it set overnight in the fridge to let the flavors set in and it was Delicious! Taste exactly like jimmy dean pork sausage but healthier. Thank you so much for an awesome recipe. This one is a keeper.

This Three Cheese Broccoli Brunch Bake is a tasty meatless egg dish that is perfect for breakfast or brunch!

Three Cheese Broccoli Brunch Bake

mushrooms

oz 1/3 less fat cream cheese (softened)

Bisquick Pancake and Baking Mix

oz 50% reduced fat sharp cheddar cheese (shredded (I use Cabot))

1% low fat cottage cheese

Pre-heat your oven to 350. Mist a 2-QT baking dish with cooking spray (I used an 8x8).

Melt the butter in a skillet over medium heat. Add the sliced mushrooms and cook for 4-5 minutes, stirring occasionally, until softened and a bit golden. Set aside.

Place the broccoli florets in a microwave-safe bowl and cover the bowl with a damp paper towel. Place the bowl in the microwave and cook for 2 minutes on high. The broccoli should be bright green and softened. Set aside.

Break the eggs into a large mixing bowl and add the cream cheese, milk, and Bisquick. Use an electric mixer or a whisk with some elbow grease to beat the mixture until combined. Add the shredded cheddar, cottage cheese, salt, and pepper and stir together. Add the mushrooms and broccoli and stir to combine.

Transfer the mixture to the prepared baking dish and make sure the ingredients are evenly distributed. Place the baking dish in the oven uncovered and bake for 55-65 minutes until the eggs are set and a toothpick inserted in the center comes out clean. Allow to cool for 10 minutes before cutting into 6 servings.

Wowzers!!!  I ended up just throwing this together this morning (it's Christmas day), and man was it good!!!  I RARELY go back for 3rd's LOL, but this was SO good.  My whole family, which consists of three growing boys and one healthy man, gobbled it right up.  I highly recommend this recipe.  I was even short one egg short and it still turned out great. This was really good! Our 18 month olds really loved it, as did us grownups. For whatever reason, it took mine more like 85 min total (8x8 pyrex), but that wasn't a big deal. I'm ready to make another today and freeze it!
