For my money, the easiest and most forgiving yakitori staple is negima: juicy chicken thigh alternately threaded onto a skewer with sections of scallion. Because thighs are naturally high in connective tissue and fat, they end up juicy even if you don't precisely measure temperature as they cook.

Japanese Chicken Skewers With Scallion (Negima Yakitori) Recipe

(1kg) boneless, skinless chicken thighs, cut into 1-inch dice

salt and freshly ground white or black pepper

scallions,

(120 milliliters) teriyaki sauce (see note)

In a large bowl, toss chicken pieces with 2 teaspoons kosher salt and a few grinds of pepper. Thread 2 to 3 pieces of chicken onto a skewer (enough to add up to around 1/2 to 3/4 inch when pressed tightly together), then thread a segment of scallion onto skewer. Continue alternating every few pieces of chicken with scallion until chicken and scallions are used up, using as many skewers as necessary. Make sure all the meat and scallions are tightly packed.

Light 2/3 chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and arrange the coals on one side of the charcoal grate. Set cooking grate in place, cover grill, and allow to preheat for 5 minutes. Alternatively, set half the burners on a gas grill to the medium-high heat setting, cover, and preheat for 10 minutes. Clean and oil the grilling grate.

Place chicken skewers directly over the hot portion of the grill, cover, and cook, turning frequently, until chicken is well browned, scallions are tender, and a piece of chicken looks cooked when removed and cut in half with a knife, about 10 minutes. Season with additional salt and pepper 2 to 3 times during the cooking process.

Brush chicken and scallions with teriyaki glaze and cook for 30 seconds. Turn, brush second side with teriyaki, and cook for 30 seconds longer. Remove chicken from grill and allow to rest for 1 to 2 minutes. Brush with additional glaze and serve immediately.

Yakitori is a Japanese skewered chicken, cooked on a griller with either sweet soy sauce or just salt. You DO NOT marinate chicken before cooking. It's great for entertaining a big crowd as it is a kind of finger food. It is quite easy to make. In this recipe, I am sharing two most common yakitori - negima (chicken and challots/scallions yakitori) and momo (plain chicken thigh yakitori) with sweet soy sauce. The recipe also includes different method of grilling yakitori – on a yakitori griller/BBQ and using the oven grill/broiler.

Yakitori

bamboo skewers

(1lb) chicken thigh

(3.5 ounces) shallots/scallions (,

milliliters (2.5 ounces) soy sauce ((normal Japanese soy sauce))

mirin

tbsp sugar

Add sauce ingredients to a pot and bring to a boil. Turn down the heat to medium or medium low and simmer for about 5 minutes to reduce the quantity by about a third. (Note 3).

To make momo (chicken thigh), thread around 5 pieces of chicken onto the skewers.

To make negima yakitori skewers, start with chicken and alternately thread chicken pieces and shallots/scallions, ending with chicken. I put through 4 chicken pieces with 3 shallots/scallions but you could have 3 chickens with 2 shallots/scallions. (Note 4)

Making yakitori skewers

The distance between the hot charcoal and where the skewers are placed should be about 5-6cm (2-2½”). (Note 5)

In the case of BBQ, oil (not in ingredients) the grill.

Using a brush, baste both sides of skewers with sauce and cook for 4-5 minutes.

Turn it over and baste the up side (cooked side) while cooking 3-4 minutes.

Turn it over again and baste the up side (cooked side) while cooking for 30 seconds or so.

Turn it over once more to cook for 30 seconds or so. (Note 6)

Remove from the griller and place it onto a plate. Serve immediately.

Grilling on yakitori griller or BBQ (using grill, not plate)

Turn the oven grill on to high.

Line a large baking tray with aluminum foil. (Note 7). Place a wire rack on it and oil the rack (not in ingredients).

Using a brush, baste both sides of skewers with sauce and place the skewers on the rack. I used 70cm x 26cm/14½” x 10¼” baking tray and I could fit all of the skewers.

Place the baking tray under the oven grill. The distance between the skewers and the grill should be about 5cm/2”.

Cook for 5-6 minutes, then take the tray out and turn the skewers over.

Baste the up side (cooked side) of the skewers and place the tray back under the grill.

Cook for 4-5 minutes, then take the tray out and turn the skewers over again.

Baste the upside (cooked side) of the skewers and place the tray back under the grill.

Cook for a minute or until the chicken and shallots/scallions start getting charred a bit.

If required, turn the skewers once more to get the other side get charred.

Remove the skewers from the tray and place them onto a plate. Serve immediately.

Grilling under the oven grill/broiler

Ready for a summer cookout? &nbsp;I highly recommend giving this Tsukune recipe a try. Drizzled with sweet soy sauce, these Japanese chicken meatball skewers are absolutely delicious. They are best on the grill but you can bake them in the oven too.&nbsp;

salt (I use Diamond Crystal; use half for table salt)

yakitori tare (sauce)

shichimi togarashi (Japanese seven spice) ((for a spicy kick))

Gather all the ingredients. Make the yakitori sauce first.

Soak 14 5-inch flat bamboo skewers in water for 30 minutes.

Pile and roll up the shiso leaves, then cut into thin julienne slices. Cut the scallion into thin slices.

Heat a non-stick frying pan over medium heat. When it’s hot, add ⅓ of ground chicken and break it up into small pieces using a wooden spatula. Cook until no longer pink and transfer to a plate to let it cool.

Combine the cooked chicken and uncooked chicken in a large bowl and mix well with a rubber spatula.

Add sesame oil and miso and mix well.

Add the scallions and shiso leaves and combine well with a silicone spatula.

Now with your hand, knead 30 times clockwise. Then knead counterclockwise 30 times. The meat will become paler in color and sticky. This part is very important for the meat to stay on a stick so please do not skip this step.

Grease the grill rack with a brush. I use a roasting pan and rack as it can support the skewers very well while the excess oil drips down to the bottom of the roasting pan when cooking.

Lightly coat your hands with sesame oil to prevent the meat from sticking. Scoop a handful of the chicken mixture (1 ½ scoop using a cookie scoop) and form into a round patty.

Toss the meat to left and right hands to release the air pockets and gently squeeze to form the meat into a long oval patty, about 3-4 inches in length. Insert the skewer on the prepared wire rack.

Lightly sprinkle salt over the chicken skewers.

Put aluminum foil around the skewers to prevent them from burning.

Set the oven broiler to high (550ºF/288 ºC) for 5 minutes before cooking. Place the baking sheet in the middle rack of the oven, about 8&quot; (20 cm) away from the heating element. Cook for 6 minutes, and then flip to cook the other side for another 4 minutes. Watch the chicken carefully not to burn; if your oven is small/strong, try broiling at medium (500ºF/260ºC) or lower the rack.

When both sides are cooked, brush the yakitori sauce on the meat and broil for another 30 seconds. Transfer the skewers to a serving plate and brush the extra sauce on the meat. Serve with Shichimi Togarashi.

You can keep the leftovers in an airtight container and store in the refrigerator for up to 3 days and in the freezer for a month.

How to Make Tsukune (Recipe) 鶏つくねの作り方（レシピ）

I used to live by a yakitori restaurant that I (no joke) went to every week. I am addicted to the depth of flavor this sauce brings to anything it touches. Try this recipe with any veggies or meat and you will be happy you did.

Yakitori Style Grilled Chicken with Scallions and Asparagus

1 1/2-2 lbs. boneless skinless chicken thighs

scallions

asparagus (ends trimmed)

soy sauce

sake

brown sugar

bouillon cube

shichimi togarashi OR red pepper flakes

skewers

Add the scallion greens, mirin, soy sauce, sake, bouillon and brown sugar to a sauce pan. Bring to boil. Lower to simmer. Simmer until reduced by 1/2.

If using wooden skewers, soak skewers for 5 minutes in water. (Skewers aren't mandatory. You can grill the chicken without skewers.)

Layer the chicken and scallions alternating (as you see in the photo) on the skewers. Sprinkle with the shichimi togarashi/red pepper flakes.

The chicken: Grill for 10-12 minutes, flipping every 3-4 minutes. Brush with the yakitori sauce and cook for 2 more minutes.

The asparagus: Grill for 8-10 minutes (until tender but still bright) brushing liberally with the yakitori sauce 2 minutes in.

Let the chicken rest for 5 minutes before serving.

Miso Yakitori (Japanese Grilled Chicken with Miso Glaze)

red or white miso

sugar

chicken thighs

If using wooden skewers, soak in water for 30 minutes prior to use.

In a small saucepan, whisk together miso, sugar, sake, and mirin. Heat over medium heat until sugar dissolves and the sauce becomes smooth, whisking constantly. Remove from heat.

Preheat grill to high heat (or high on broiler if using oven).

Cut the chicken into 1 inch pieces. Remove the dark green part of the leeks, clean well, and cut into 1 1/2 inch pieces. Place the chicken and leeks alternately onto the skewers, starting and ending with chicken pieces.

Grill, turning about every 2-3 minutes and brushing with the miso glaze, until the chicken is cooked through.

Serve immediately.

Tare (Soy Basting Sauce)

chicken broth

mirin (sweet Japanese rice wine)

(packed) light brown sugar

black pepper

garlic clove, crushed

scallion, chopped

1-inch-piece peeled ginger t(1/4 ounce), sliced

Place a fine-mesh sieve over a small bowl. Bring all ingredients to a boil in a small heavy saucepan, stirring until sugar dissolves. Reduce heat to medium-low and simmer until reduced to a generous 1/2 cup, about 20 minutes. Strain sauce, discarding solids in sieve. Let cool. DO AHEAD: Can be made 2 weeks ahead. Store airtight in refrigerator.

Yakitori is a Japanese grilled chicken recipe served on skewers and glazed in a delicious sweet and savory homemade Yakitori sauce. Often served with drinks at bars in Japan, enjoy Yakitori as a quick and easy appetizer, snack, or dinner.

Chicken Yakitori

boneless, skinless chicken thighs

salt

mirin ((Japanese rice wine))

ginger (minced (optional))

garlic (minced (optional))

Soak the wooden skewers in water for at least 30 minutes to prevent them from burning as they grill.

As the skewers soak, chop the chicken and season with salt and black pepper.

Add the soy sauce, brown sugar, sake, mirin, ginger, and garlic to a small saucepan set over medium heat. Bring to a gentle simmer, reduce heat to low, and simmer for 5-6 minutes or until the sauce thickens. Stir as needed to prevent burning. Once thickened, set aside half of the sauce for basting and the other half for dipping (see notes).

Preheat the grill to medium-high heat and lightly oil the grill grates with non-stick cooking spray.

Thread chicken pieces onto the skewers, leaving a little space between each piece.

Place the skewers on the grill and cook for 3 minutes before flipping over. Baste the cooked side with the sauce and cook for 3 minutes.

Flip again, every 2 minutes, brushing them each time with the sauce until they are cooked through.

Garnish with freshly chopped green onions and serve with lime wedges and the other half of the sauce, if desired.

Our vegan yakitori are seitan based skewers with a spicy taste and the right meaty consistency. They make for a great snack during a BBQ or dinner party.

Vegan yakitori
