Sweet potato gives these waffles a nice golden peach color and wonderful flavour.  They are crispy on the outside and soft in the inside. Sweet potatoes provide almost half the recommened daily allowance of Vitamin C and two to five times the recommened amount of Beta Carotene!

Sweet Potato Waffles

whole wheat flour

all-purpose flour

baking powder

cinnamon

clove

eggs, seperated

milk

sweet potato

orange rind

sugar

In large bowl, mix together flour, baking powder and spices.

In seperate bowl, whisk together egg yolks, milk, sweet potato, oil and orange rind.

Pour wet ingredients over dry ingredients, stir together until just moistened.

In a bowl with electric mixer, beat egg whites until soft peaks form; add sugar, beat until stiff peaks form.

Fold into batter; pour batter onto a heated nonstick lightly greased waffle iron.

Cook until golden brown until waffle iron stops steaming, about 5 minutes.

NOTE: These waffles freeze well; After freezing, just microwave them for about 30 seconds and pop them briefly into the toaster.

I just got a new Belgium waffle maker and went in search of some recipes to try it out. I printed off five (out of over 900 posted here!). My husband said this one sounded the most interesting, so I tried it first. Yummmm! And they're a healthy version too. If you are used to using a boxed mix, this may seem like a lot of work. But it goes together pretty quick and is well worth the effort. Thanks so much for sharing. This one goes in my best loved file!

Vegetarian Black-Eyed Pea Stew

vegetable oil

onion,

celery rib,

garlic cloves, finely chopped

water

carrots,

potatoes

parsnip,

flat-leaf parsley

oregano

salt

black pepper

white rice

black-eyed peas, rinsed and drained

Heat oil in a large, heavy-duty pot over medium-high heat. Add onion, celery and garlic and saut&eacute; for 5 minutes, or until softened. Add water, carrots, sweet potato, parsnip, parsley, oregano, salt and pepper and bring to a boil. Reduce heat and simmer for 10 minutes, stirring occasionally. Add rice and cook for 20 minutes, stirring occasionally, until rice is tender. Add black-eyed peas and cook until thoroughly heated.

Remove from heat and let stand for 10 minutes. Serve in shallow bowls with bread, if desired.

Unfortunately, it was just OK. Pretty bland. I made the recipe as written, but it was very watery--more like a soup than a stew. So I added some couscous and some lentils to thicken it up. Then I used the previous reviewer's idea of adding a little butter and some Greek seasoning. Still bland. So I added some diced Anaheim pepper. I still might make this again, because I love black eyed peas, but I will plan to add a lot more seasoning next time.

For those Red meat lovers in my life! Feel free to substitute beef steak for the meat or butternut squash for a sweet potato! I love this because it is relatively inexpensive and very easy to be super creative with flavors!

Pork Pot Pie

white whole wheat flour

shortening butter

pork chops

sweet onion

red pepper

fresno chile pepper (optional)

vegetable broth chicken broth

sour cream

marjoram

paprika

thyme

Mix together white wheat flour, salt, and sugar.

Cut shortening or butter into flour. I like to leave pretty good size chunks of shortening or butter to make the pie crust more flaky.

Add ICE COLD water a Tbsp at a time until flour/shortening pieces stick together and are ballable. ** I always add a different amount of water when doing pie crust. At most you may use a 1/4 C of water and at least you may use 1/8&deg;C I think it depends on the moisture in the flour/sugar/salt/air as to how much you would add.**.

Split ball into half and roll out bottom and top of pie crust to a 1/2 centimeter thickness.

Flour pork chops and cook in frying pan on med-low heat with butter. Take out, cube, and set aside.

Cube sweet potatoes, onion, red pepper, Fresno pepper and spices into frying pan with chicken broth. Bring to boil and simmer for 15-20 minute

Put an equal ratio of flour and butter together in a small cup (usually one tbsp to one tbsp is enough) mix into broth and veggies. This will thicken the broth to make it more like a gravy. You can use several different techniques to thicken broth.

Add cubed pork and sour cream to frying pan.

Simmer for a few min, then pour into pie crust. Cover with 2nd layer of crust. Bake for 50 min at 375.

This is truly delicious and wonderful on a dark and rainy evening.  I used frozen puff pastry, eliminating the need to make pie crust, and leftovers from a pork loin roast.  The melded flavors of the herbs and vegetables used were a welcome variation of the usual for a pot pie or stew.  I will definitely be making this again and again.

In a large saucepan cover sliced sweet potatoes with lightly salted water.

Cook for 7 minutes or until tender but still firm.

Drain reserving 2 cups of the cooking liquid.

In a medium saucepan over medium heat stir together the 2 cups reserved liquid, sugar, flour, cinnamon, nutmeg and cloves.

Keep stirring until the sugar is disolved.

Pour the syrup over the sweet potatoes and cook over medium high heat until syrup bubbles up and over the potatoes.

Layer the sweet potato slices in a 8x10 inch glass dish.

Cut pastry lattice style and top cobbler.

Brush with milk, sprinkle with sugar, nuts and bake in a 400 degree oven for 20-25 minutes.

Now I have made many different types of cobbler but never with sweet potatoes. So I just had to give this on a try. Outstanding. The sweet potatoes cooked in the sugar-spice mixture tasted heavenly. Looked beautiful as well. Thanks Diana for one excellent cobbler recipe.

West African Groundnut Stew (Moosewood)

cayenne pepper

garlic, pressed

cabbage

tomato juice

apple juice apricot juice

grated peeled gingerroot, fresh

chopped cilantro, fresh (optional)

chopped tomatoes

Saut&eacute; the onions in the oil for about 10 minutes. Stir in the cayenne and garlic and saut&eacute; for a couple more minutes. Add the cabbage and sweet potatoes and saut&eacute;, covered for a few minutes. Mix in the juices, salt, ginger, cilantro, and tomatoes. Cover and simmer for about 15 minutes, until the sweet potatoes are tender. Add the okra and simmer for 5 minutes more. Stir in the peanut butter, place the pan on a heat diffuser, and simmer gently until ready to serve. Add more juice or water if the stew is too thick.

I have been cooking this stew for years, with slight variations each time, all wonderful. I do use a whole cup of natural crunchy peanut butter for more protein.  
 I looked it up because we are temporarily in a condo without my precious Moosewood cook books while our house is being renovated.  I will be making it for six friends tomorrow night.  It is great because vegans and non gluten eaters can eat it.  Not so nut allergic friends, but there are other recipes for them.  :)
