Heat the oil in a large, deep skillet over medium high heat. Add the shallots and saute them for 5-6 minutes or until they just begin to get golden. Add the butternut squash and grated ginger, stir to coat with the oil.

Add the red curry paste, yellow curry powder and stir until all the butternut squash is nicely coated. Continue to cook the curry paste for 2-3 minutes or until it's fragrant. Add the broth, coconut milk, fish sauce, and sugar. Let the sauce come to a simmer before covering. Lower the heat and allow the squash to cook all the way through, about 12-18 minutes. You'll know it's done when you can easily pierce the butternut squash with the tip of a knife. Stir in the baby spinach and allow it to wilt.

Heat the oil over medium high heat. Add the shallots and stir fry until soft and fragrant. Add the sweet potatoes and stir to coat with oil. Add the curry paste and stir until well-combined.

Add the coconut milk and broth and let it simmer over low heat for 10-15 minutes until thickened. Stir in the spinach until wilted.

Add half of the peanut/cilantro mixture; reserve the rest for topping. Add a quick splash of fish sauce to the curry to make the whole thing just sing harmony in your mouth. Yummy.

Creamy Thai Sweet Potato Curry – packed with nutrition! our favorite easy, healthy, winter comfort food recipe. vegetarian and vegan.



This easy Thai Yellow Curry is made with chicken and vegetables and served over steamed rice. This recipe can easily be made vegan or vegetarian! 

Yellow Curry

onion (, chopped)

chicken breasts

gold potatoes ((or about 10 baby gold) ½’’ cubed)

carrot (, thinly sliced)

yellow curry paste (*or homemade curry paste)

garlic

coconut milk ((2- 13.5 ounce cans))

cornstarch

fish sauce ((optional))

lime juice

brown sugar

rice (,

Heat the oil in a large pot over medium low heat. Add the onion and saute for a few minutes until softened. Add the chicken, carrots, potatoes and cook for a minute or two. Add ginger, garlic and curry paste and saute for 3 minutes.

Add 1 ½ cans of coconut milk to the pot. Stir cornstarch into remaining ½ can of coconut milk and add to the pot.

Bring to a boil. Reduce heat and simmer for 20-30 minutes or until the chicken and potatoes are cooked through.  Adjust the thickness of the curry by adding more water to thin, if needed.

Stir in the fish sauce, brown sugar and lime juice. Simmer 5 more minutes.

Serve with any type of rice (white, brown, and jasmine are my favorites) or over zoodles, spaghetti squash or quinoa.

This Thai inspired coconut milk curry chicken recipe is full of flavor and made in one pan. It makes a great weeknight dinner that can be ready in about 30 minutes.

Coconut Milk Curry with Chicken

coconut oil (canola

chicken breasts (cut into 2 inch cubes)

tbsp curry powder (divided)

Salt and pepper

onion

garlic (finely chopped, about 2 tsp)

ginger (about a 2 inch knob, finely chopped (not powdered))

tomato paste (about half a 6 oz can)

tsp cumin

tsp coriander

tsp ancho chili powder

1-15.25 oz can coconut milk (full fat, not reduced fat)

chicken broth

tbsp brown sugar (optional)

rice

naan

Lime wedges

Cilantro leaves

red pepper flakes

In a medium bowl, toss chopped chicken pieces with ½ tbsp curry powder, salt and pepper.

Heat one tbsp coconut oil in a large skillet oven medium-high heat. When melted, add chicken and cook until lightly browned but not cooked through, about 2 minutes per side. Remove chicken from pan to a plate and set aside.

Melt one to two tablespoons of coconut oil in the same skillet over medium heat. Add onions and cook for about 3 to 5 minutes or until softened and starting to turn golden. Add the garlic and ginger, stir to combine.

Add tomato paste, remaining curry powder, cumin, coriander, and ancho chili powder to the skillet. Mix everything together to form a thick paste.

Add coconut milk and chicken broth to the skillet, stirring to combine. I like to use a flat whisk to get it to come together.

Turn heat to medium high to get bubbling. Turn heat down so it simmers gently. Simmer for about 8 minutes.

Add brown sugar, stir to combine. Return browned chicken to the skillet. Bring heat to medium and simmer until chicken is cooked through, about 3-5 minutes more or until a meat thermometer registers 165º F.

Serve with hot cooked rice, lime wedges, and chopped cilantro.

This Creamy Red Lentil Curry is one of my favorite dishes because it’s super flavorful, nutritious, protein-packed, and you can make it in a blink of an eye.

Recipe: Creamy Red Lentil Curry

Boil rice

If having rice with your lentils, put it to boil with three cups of water and 1 tsp of salt. It will take 10-15 minutes and be ready when your lentils are.

Chop

Chop your garlic, spring onions and bell peppers in massive cuts. Remember that reducing your vegetables’ surface exposure to the heat keeps more of their nutrients. Feel free to add any other leftover veggies you have, such as broccoli or cauliflower stems.

Stir-fry

In a pan, stir-fry your veggies with the coconut oil for 3 minutes and add the yellow curry paste.

Add the coconut milk, curry paste and all the spices. Let the mixture simmer for another 2 minutes.

Add the lentils along with 4 cups of water, stir twice during the 10 minutes it will take to be ready.

Adjust

Adjust the flavor. You migh choose to add some curry or salt.

Serve with Jasmine Rice
