Pizza Pesto, Zucchini &amp; Flowers, introduces a wonderful vegetable blossom to the mix on a deliciously baked pizza. Sweet zucchini and zucchini flowers meet a bold and incredible arugula pesto on a crispy Italian thin crust!

Pizza Pesto, Zucchini &amp; Flowers

zucchini

fine sea salt

black pepper

Tbsp e.v.o. oil

oregano

basil leaves

Tbsp pesto (homemade

Italian Asiago cheese

goat feta cheese

lemon zest fleur de sel

Toss the zucchini rounds in a bowl with some of the olive oil, sea salt, pepper and dried oregano.

Drizzle a little olive oil onto a 14 inch pizza oven pan. Place dough onto the well-oiled pizza pan. Use your hands from the center and stretch the dough gently to the edges, leaving a nice bordered edge.

Spoon the arugula pesto onto the pizza and spread it all around leaving a 1-2 cm rim at the outer edge.

Sprinkle some of the grated Asiago all over the pesto.

Place the seasoned zucchini rounds onto the pesto, then the flowers and basil leaves.

Top with some freshly cracked black pepper, crumbled feta cheese, and lastly a drizzle of e.v.o. oil, finally a sprinkle of lemon zest fleur de sel.

Into the middle rack of the oven it goes for 15 minutes or until nice and golden at the bottom

Turn oven to low grill and cook for an additional 1 minute.

Take out of the oven and out of the pan onto a cutting board. Cut into slices and serve.

Oh my goodness! This is the most poetically named pizza I've encountered in a long time! I am so jealous of all the zucchini flowers:) You have inspired me to grow some zucchini next summer so I can have my own harvest of them to indulge in. Absolutely hooked! And the pizza is so pretty. Pinned!

One of the great joys in life for me and my wife are stuffed zucchini blossoms. We were first introduced to these delicious little bites of heaven on our first visit to Rome and have enjoyed them ever since.

Stuffed Zucchini Blossoms

12-15 Zucchini Blossoms

Ricotta Cheese

oz grated Romano Cheese

oz Shredded Mozzarella Cheese

egg- lightly beaten

Sea Salt and Black Pepper to taste

Granulated Garlic

Cooking oil

eggs

milk

flour

grated Romano

Tablespoon chopped Basil

mix all the ingredients together and place in small pastry bag, or a ziplock bag with an end snipped off.

open one end of the blossom gently and squeeze a small amount of cheese into the blossom. Due not overfill, you want enough to almost fill the blossom not to make it bulge.

Refrigerate the blossoms for about 10-15 minutes while you get the egg mixture together.

Blossom Stuffing

Lightly beat the eggs and add in milk, flour, cheese, and basil. Mix well. Egg Mixture should be about pancake mix thickness. If the mix is too thick the egg coating will be to thick and if its too thin it will run off.

Heat a large sauté pan and then add about 1/4 inch of cooking oil to the pan.

Dredge Zucchini Blossom in egg mixture, shed any excess egg and place into hot oil, continue the process till you fill the pan.

Fry each side of the Blossom until golden brown, about two minutes on each side, the second side may cook faster, keep an eye on them.

Place finished blossom on paper towels to drain off any excess oil.

Place blossoms on serving tray and season with grated Romano cheese, sea salt and black pepper.

Egg Batter

Light, crispy, airy and cheese stuffed, these goat cheese stuffed fried zucchini blossoms are appetizer perfection.

Crispy Herbed Goat Cheese Stuffed Zucchini Blossoms

herbed goat cheese

zucchini blossoms (rinsed, stamens removed)

all purpose flour

water

salt

Gently place 1 teaspoon of goat cheese into the center of each blossom, being careful not to tear the petals.

Heat about 1 inch of oil in a skillet over medium-high heat. Until it reaches 350 degrees or until a bit of batter dropped into it begins frying.

While you are waiting for your oil to heat up, make your batter by whisking together flour and ice water until a smooth and thin batter forms.

Once your oil is hot, carefully dredge the stuffed zucchini blossoms in the batter. Allow any excess to drip off and then fry until golden brown 1 - 2 minutes on each side. You may need to do this in batches so you don't over crowd the pan.
