Mediterranean Grilled Zucchini Salad

Bright, herby, and bursting with texture, this zesty zucchini feta salad hits the perfect balance of fresh and comforting. Whether you're serving it as a light main or a standout side, this nutritious dish brings crave-worthy Mediterranean flavors to the table.

Warm Zucchini Feta Salad

dry short-cut pasta ((such as ditalini or orzo))

Tbsp. extra-virgin olive oil, divided

kosher salt, divided

medium shallot, finely chopped ((about 1/3 cup))

garlic cloves, minced

Tbsp. capers, drained

feta cheese

roasted, salted pistachios, roughly chopped

Tbsp. chopped fresh dill

Cook pasta in a pot of generously salted water until al dente. Drain, rinse, and transfer to a large bowl.

Meanwhile, prepare zucchini. If your zucchinis are on the slender size, slice them in half lengthwise, and then slice crosswise into half moons. For larger zucchini, slice them lengthwise into halves, and then again into quarters. Cut each quarter into chunks.Heat 2 Tbsp. olive oil in a large skillet over medium. Add zucchini and sauté until golden, about 7 to 8 minutes. During the final 2 minutes, add shallots, garlic, and capers. Once everything is nicely softened, season with 1/2 tsp. salt and 1/4 tsp. black pepper. Transfer zucchini mixture to the bowl with cooked pasta.

Add remaining salad ingredients - chickpeas, feta, pistachios, parsley, and dill. Season everything with remaining 1/4 tsp. salt and 1/4 tsp. black pepper, and drizzle with remaining 3 Tbsp. olive oil. Squeeze in fresh lemon juice and toss everything well to combine. If desired, garnish with extra crumbled feta and chopped pistachios. Enjoy warm or closer to room temperature.

I loved this and I'm not even a huge zucchini eater. I skipped the pasta, but missed its heartiness - will probably replace it with bulgur next time. I also added a touch of sweetness with some leftover fig chutney and some chilli crisp for the spice. So versatile, so great!

Subbed GF fusilli pasta and this is so delicious! My picky eater picked out the noodles (but ate with the herbs and lemon/oil). I also doubled the lemon juice called for in recipe. Delicious summer recipe!

Absolutely delicious! Love the flavors and textures of this salad. Added a calabrian chili with the shallot/caper mixture for a little heat and topped with grilled chicken.

This was delicious!! We topped it with grilled chicken seasoned with a garlic-Italian herb seasoning blend and it was perfect paired with the flavors of the salad. Also yummy for leftovers!!

So delicious! I ate it warm and then cold the next day and used protein pasta. 10/10 with the shallot mixture.

Sooooo good! I used quinoa instead of pasta. I’ve already made it twice in 2 weeks.
Thank you for your yummy recipes

The flavors were fantastic. Will definitely be making this as my zucchini ramps up this summer.

This was fabulous! Your recipes never let me down!

Love all your recipes! So healthy and delicious!

Wondering what to do with zucchini? This no-cook Chinese-style Zucchini Salad is a great, unique way to enjoy this versatile vegetable!

Chinese-Style Zucchini Salad

½ pounds zucchini ((about 3 medium))

salt

sugar

Sichuan peppercorn powder ((or white peppercorn powder))

sesame oil

soy sauce

rice vinegar

chili oil ((optional))

sesame seeds

Wash the zucchini and pat dry with a clean towel. Trim off the ends, and cut each zucchini in half lengthwise. Scoop out any large seeds from the middle. Then use a julienne peeler, spiralizer, or just a knife to cut the zucchini into long thin strands or julienne it.

In a bowl, sprinkle the salt over the zucchini, and toss it well. Let it stand for 20 minutes on the counter.

Make the dressing by combining the sugar, Sichuan peppercorn powder, sesame oil, light soy sauce, lemon juice and rice vinegar. Stir until the sugar is completely dissolved.

After 20 minutes, discard the liquid at the bottom of the bowl of zucchini, and gently squeeze out some of the liquid from the zucchini.

Right before serving, mix the zucchini with the prepared dressing, garlic and chili oil if using. Garnish with sesame seeds, and serve immediately.

So easy to put together and so Flavourful …absolutely delicious

I love the tanginess and crunchiness of this recipe. It dances with flavor and is a very satisfying dish. My husband is not a fan of zucchini but he loves this dish. We will be making this often!

I can't believe how flavorful this was!! I've made it for family and friends a few times and everyone always loves it.

I made this recipe and added chicken and feta cheese plus lots of zucchini from
Our garden! My daughter said this is a recipe that should be on repeat!! High accolades from
Our family! Thank you!!

Love this. Another great combination of flavors.

Delicious!! My zucchini took longer too cook, closer to 20 minutes, possibly bc my pan was too crowded. I nearly doubled the walnuts and loved how their flavor came through. Next time I'd add more parmesan. Amazing, will put this one into the regular rotation!

Lovely dish! I mostly followed but combined with a similar recipe from The NY Times and added lentils. You just start lentils in the pot first and then add the orzo. Also added a lot of fresh herbs: parsley, mint, basil.

One of my favorite summery pasta salad recipes! It’s perfectly balanced with a tangy delicious vinaigrette that pairs so beautifully with the nutty walnuts, cheese, and pasta! We can’t get enough of this in our house. T

Flavoursome, easy and entirely delicious!

This is a fantastic side. It was a hit with my family--kids included (ages 8 and 10).

We LOVE this salad!! The dressing is fantastic and so flavorful. We had made it many, many times!!

This is a new fav - simple, tasty and great balance of flavours. I accompany it With simple lamb cutlets seasoned with a bit of sumac.

This Zucchini Pasta Salad is everything summer should taste like: fresh, satisfying, and flavor-packed. Featuring Parmesan-roasted zucchini, toasted walnuts, capers, and luscious burrata cheese tossed in a bright basil vinaigrette. Perfect for entertaining, weeknight dinners, and even meal prep.

Roasted Zucchini Pasta Salad

lbs. zucchini, trimmed and

Parmigiano-Reggiano cheese ((sub Pecorino Romano))

(or black pepper

walnut halves, toasted and coarsely chopped*

basil leaves

(4-ounce) ball burrata cheese

vinegar

kosher salt + 1/4 tsp. cracked black pepper

chili flakes

Roast Zucchini. Place a baking sheet on the center rack of the oven and preheat oven to 450ºF.Use a Chef's knife or mandoline slicer to very thinly slice the zucchini. Add zucchini to a large mixing bowl along with shallots, 3 to 4 Tbsp. extra-virgin olive oil, Parmigiano-Reggiano, kosher salt, and black pepper. Toss well to combine.Once oven is preheated, carefully remove the hot baking sheet and spread the zucchini mixture into an even layer (there will be some overlap). Return baking sheet to oven and roast for 18 to 24 minutes, depending on thickness of zucchini, tossing once halfway through, until nicely caramelized.(Note: By preheating the baking sheet while the oven comes to temperature, the zucchini starts cooking the moment it hits the pan. This helps excess moisture evaporate quickly so the edges caramelize instead of steam.)

Boil pasta. Meanwhile, bring a large pot of generously salted water to a boil. Add rigatoni pasta and cook until al dente. Drain, briefly rinse under cold water, and add to the same mixing bowl you used for the zucchini (no need to wipe clean).

Prepare Basil Vinaigrette. Combine basil leaves, olive oil, lemon zest and juice, garlic, vinegar, salt, black pepper, and chili flakes in a small blender; blend until smooth. Alternatively, combine everything in a wide-mouth jar or measuring cup and blend with an immersion blender until smooth.

Assemble. To the bowl of cooked pasta, add roasted zucchini and shallot mixture, walnuts, capers, basil leaves, and about two-thirds of the dressing; toss well to combine. Taste and season with extra salt and/or black pepper if needed.Empty mixture out onto a serving platter, and tear burrata cheese overtop, scattering small amounts throughout so every serving gets a bit of creamy cheese. Season burrata dollops with a pinch of kosher salt, and spoon (or pour) remaining dressing overtop. Garnish with extra fresh basil, cracked black pepper, or chili flakes, if desired. Serve warm or closer to room temperature.

I made this tonight and it’s delish! Love the flavors!!

Delicious!! I added some cherry tomatoes as my garden has been overflowing

This is truly special and perfect for something delicious and easy to throw together. I love the simplicity of the recipe.
