Preheat air fryer to 400°F. Grate zest from 1 clementine into a measuring cup, then squeeze juice from that plus one additional clementine (you should have about 1/4 cup). Add honey and whisk until dissolved.
Step 2
Lightly oil air fryer basket with cooking spray. Slice remaining clementine. Arrange half of sliced clementine and lemon in even layer in bottom of prepared basket. Top with two salmon fillets, skin side down. Brush salmon with half of clementine juice mixture. Sprinkle with half each thyme leaves and fennel. Season with salt and pepper. Air fry until just barely opaque, 8 to 10 minutes. Repeat with remaining sliced fruit, salmon, juice mixture, thyme, and fennel.
