Step 1
Chop the potatoes into large chunks then place in a pot of boiling, salted water and par-boil for 10 minutes.
Step 2
Drain and shake the potatoes in a colander to allow the edges to become a little roughed up - this will turn into super crispy bits once air fried.
Step 3
In a large bowl, toss the potatoes with the oil and season with salt and pepper.
Step 4
Transfer to the air fryer basket.
Step 5
Air fry the potatoes at 400°F/205°C for 20-30 minutes, shaking half way, until the potatoes are crisp and golden.
Step 6
Remove and serve.
