Step 1

Drain and press tofu for at least 30 minutes using a tofu press or place it between two cutting boards with a heavy object on top (like a cast iron pan).

Step 2

While the tofu presses, make your marinade by mixing 1/4 cup reduced sodium soy sauce, 2 tsp rice vinegar, and 1/2 tsp powdered ginger together in a bowl.

Step 3

Cut the pressed tofu into 1-inch cubes and marinate in the mixture for 30 minutes (or overnight in the refrigerator) in a sealed bag or container.

Step 4

Gently toss the tofu cubes in 2-4 Tbsp of cornstarch until evenly coated.

Step 5

Spray the air fryer basket with cooking spray or a thin layer of olive oil.

Step 6

Air fry the tofu at 375°F for about 15 minutes until golden brown, shaking the basket halfway through.

Step 7

While the tofu cooks, make the sauce. In a saucepan over medium heat, whisk together all sauce ingredients.

Step 8

Continuously whisk for 5 minutes over medium heat until the sauce thickens. This happens very quickly, so keep an eye on it so it does not burn! Remove from heat and allow the sauce to thicken a bit more as it cools.

Step 9

Toss the cooked tofu with the sauce and serve over rice and veggies.
