Preheat your oven to 250°F.
Step 2
Prepare your roasting pan by covering with foil andplacing the rack in the pan.
Step 3
Clean the roast by removing any excess fat or tough sinewfrom the outside of the roast.

Truss the roast to ensure a uniform shape and evencooking.
Step 5
In a food processor, blend the kosher salt, black pepper,garlic cloves, thyme, and extra virgin olive oil to form a paste.
Step 6
Generously rub the prime rib with the paste and place iton the prepared roasting rack.
Step 7
Place the roast in the oven and cook for approximately 2hours and 30 minutes or until the internal temperature reaches 115°F for mediumrare; 125°F for medium; 135°F for medium well.
Step 8
Remove the roast from the oven and increase the oventemperature to 500°F.
Step 9
Once your oven is preheated, place the roast back in theoven to sear for 5 minutes until crispy and golden brown.
Step 10
Remove the prime rib and allow to rest for 15 minutesbefore removing the twine and slicing.
Step 11
Serve as desired.
