Step 1

Pre-heat oven to 375 degrees F. In a large bowl, add the oats, cinnamon, baking powder, salt and coconut sugar. Mix together.

Step 2

Next, add the almond milk, maple syrup, apple sauce, vanilla and flaxseed. Mix together and let sit for 3-5 minutes. Add the diced apples and mix again.

Step 3

Pour baked oatmeal mixture into a large baking dish, or into a muffin pan, and top with a few more pieces of apples if desired. Spread mixture out so that it’s even and then bake until it’s cooked through, 35-40 minutes. Let cool for 10-15 minutes before eating.
