Step 1

Peel and chop your apples, trying to keep the pieces a similar size for more uniform cooking. Then place the apples into a saucepan on a medium heat with the sugar replacement, ginger wine, fresh and ground ginger. Stir to combine.

Step 2

Leave the apples to simmer gently for around 15-20 minutes, stirring occasionally to prevent any burning. Turn the heat down as necessary.

While the apple is stewing make the crumble topping.

Preheat the oven to 180 C fan / 200 C

In a bowl mix the oats, ground almonds, ground ginger, mixed spice and sugar replacement. Stir in the butter until you have a breadcrumb-like texture.

Step 6

Add the chopped walnuts and mix well.

Step 7

Place the crumbs onto a baking sheet and bake in the oven for 15 mins turning them halfway through.

Step 8

In an ovenproof dish (25xassemble the apple crumble. Add your layer of stewed ginger apples and then add gingerbread crumble topping.

Step 9

If you are making this dessert in advance, then leave it to one side to cool. Keep covered and store overnight in the fridge. Just increase the cooking time by 10-15 minutes if cooking from chilled.

Otherwise cook your assembled crumble in your preheated oven, 180 C / 160 C fan for 30 minutes
