Step 1
Preheat the oven to 350°F. Grease an 8×8 inch or 12×6 inch baking dish.
Step 2
Melt 3 Tbsp butter in a small pan or in the microwave. Cool and reserve.
Step 3
Soak the matzah in a bowl of cold water. While the matzah is soaking, peel and core the apples. Dice the apples into small pieces. Transfer to a medium bowl and squeeze lemon juice over the apples. Reserve.
Step 4
In a large bowl, whisk together the eggs, brown sugar, melted butter, cinnamon, salt and ground ginger.
Step 5
Drain the matzah, and squeeze out excess liquid. Crumble the matzah into the egg mixture. Add the diced apples and currants. Mix until everything is combined. Transfer the kugel mixture to the greased baking dish.
Step 6
Add the streusel ingredients to a small bowl. Using your hands, rub the butter into the mixture until the streusel starts coming together and forms pea-sized crumbs. Crumble the streusel over the top of the kugel.
Step 7
Bake for 45-50 minutes or until golden brown on top and bubbly. Allow to cool for at least 15 minutes prior to serving. Serve warm or at room temperature.
