Step 1
• Adjust racks to top and middle positionsand preheat oven to 425 degrees. Washand dry produce.• Cut potatoes into ½-inch-thick wedges.Halve, core, and thinly slice green pepperinto strips. Halve, peel, and thinly slice halfthe onion (whole onion for 4 servings).• Place 2 TBSP butter (4 TBSP for in a smallmicrowave-safe bowl; microwave until justsoftened, 10-15 seconds. Stir in ¼ tsp garlicpowder (½ tsp for and a pinch of salt.(You’ll use the remaining garlic powder inthe next step.)
Step 2
• Toss potatoes on a baking sheet with adrizzle of olive oil, remaining garlicpowder, salt, and pepper.• Roast on top rack until browned and crispy,20-25 minutes.
Step 3
• While potatoes roast, heat a large drizzleof olive oil in a large pan over medium-high heat. Add green pepper, slicedonion, and a pinch of salt and pepper.Cook, stirring occasionally, until softenedand lightly charred, 5-7 minutes. TIP: Addsplashes of water as needed to preventveggies from burning.• Transfer to a plate.
Step 4
• Meanwhile, remove sausage* from casing;discard casing.• Heat a drizzle of olive oil in pan used forveggies over medium-high heat. Addsausage and cook, breaking up meat intopieces, until browned and cooked through,4-6 minutes. TIP: If there’s excess grease inyour pan, carefully pour it out.
Step 5
• Stir tomato paste, half the Italian Seasoning,and ½ cup water into pan with sausage.(For 4 servings, use all the Italian Seasoningand 1 cup water.) Cook, stirring, until sauce isbubbling, 1-2 minutes. Taste and season withsalt and pepper.
Step 6
• When potatoes have about 5 minutes left,halve baguettes lengthwise, stoppingbefore you get all the way through. Spreadcut sides with garlic butter. Place, cut sidesup, on a second baking sheet. TIP: Linesheet with foil first for easier cleanup.• Toast on middle rack of oven until bread isgolden, 3-4 minutes.• Carefully spoon sausage mixture ontobottom halves; top with veggies andmozzarella. TIP: The sandwiches aresupposed to be messy—don’t be afraid topile them high!• Return to middle rack until cheese melts,2-3 minutes more.
Step 7
• Close heroes, pressing down to secure.Divide between plates. Serve with potatowedges on the side.
