Preheat the oven to 400°F with a rack in the center position

Wash potatoes with a stiff brush, removing any excess dirt and pat dry

Prick each potato 8-12 times using a fork

Brush the potatoes with the oil.Place the potatoes directly on the oven rack, setting a rimmed baking sheet on the lower rack to catch any liquid that drips out of the potatoes.Bake until tender, about 60 minutes
Step 5
Let cool for about 5 minutes.Using a sharp knife, slit the tops of the potatoes open and fluff the inside with a fork
Step 6
Top with butter, salt and pepper.
