Step 1
Add Balsamic vinegar, ketchup, dijon mustard, and beef broth to a slow cooker and stir ingredients together.
Step 2
Add ground beef, onion powder, thyme, salt and pepper to a large mixing bowl and mix until all ingredients are combined. Form into meatballs and place into a slow cooker.
Step 3
Roughly slice a red onion, add to slow cooker and cook on high for 2 hours or on low for 4 hours.
Step 4
30 minutes before the slow cooker timer is up, add a few handfuls of bok choy or spinach and allow to cook down.
Step 5
Cook noodles according to package instructions. Add broth and meatballs on top of rice noodles. Top with Sesame if you'd like!
Step 6
Eat!
