Preheat Oven to 190C (375F)

Prepare muffin trays with cupcake liners or grease well

In a large bowl add the flour, baking powder and salt.

Melt the butter and mash the bananas.
Step 5
In a separate bowl add the melted butter, sugar, lightly beaten egg, vanilla, mashed bananas and first measure of coconut and mix well.
Step 6
Pour the wet ingredients into the flour mixture and combine gently with a wooden or large spoon until fully incorporated.
Step 7
Spoon into the prepared cupcake cases (approx 2/3rds full)
Step 8
Sprinkle the batter with the extra coconut
Step 9
Bake for 20-25 minutes until tops are lightly golden and muffins spring back to the touch.
Step 10
Allow to cool slightly in the muffin tray then carefully remove to a wire rack.
Step 11
Delicious warm or cold.
Step 12
Store in an airtight container.
